The Santarelli family has run this Grottaferrata estate since the first vines went in during 1974. Frascati Superiore DOCG, the Viognier-led Donna Adriana and the Syrah-led I Quattro Mori show what the Castelli Romani can do at low yields. Decugnano dei Barbi sits in the hills north-east of Orvieto, on sandy soil full of fossil seashells. Claudio Barbi took on the abandoned estate in 1973, and the estate says his first sparkling wine, from 1978, was the first of its kind in Umbria. His son Enzo carries on the work. Mare Antico, an Orvieto Classico Superiore, is the white the estate says best represents it, beside the red A.D.1212 and the sweet Pourriture Noble. Tours, tastings and cooking classes can be booked online, and Villa Barbi sleeps up to ten.

Founded in 1983 by Romano Dal Forno in Val d'Illasi, the eastern arm of Valpolicella, and family-run today by his son Marco. The 34 hectare estate is planted at almost 13,000 vines per hectare and makes three wines: Valpolicella Superiore Monte Lodoletta, Amarone della Valpolicella DOCG Monte Lodoletta and the rare Vigna Seré passito.

Follador has made wine at Col San Martino since 1769, when the Doge of Venice rewarded Giovanni Follador's quality. Gianfranco Follador's four children now run the estate, filling around 1.5 million bottles a year, with every Superiore grape picked by hand on the steep Conegliano Valdobbiadene hills.
