Follador

Follador makes Prosecco Superiore at Col San Martino, a village on the steep hills between Conegliano and Valdobbiadene, north of Treviso. The family dates its winemaking to 1769, when the Doge of Venice gave Giovanni Follador an award for his wine. The ninth generation, Gianfranco Follador's four children, now runs the estate and fills around 1.5 million bottles a year. Every Superiore grape is picked by hand. Visitors can book a tasting, a cellar tour, or a tasting at the family's Rustico below the Torri di Credazzo.

About Follador

Giovanni Follador had turned all his land over to vines. In 1769 the Doge of Venice, Alvise IV Mocenigo, gave him an award for the quality of his wine. The family counts nine generations of winemaking from that year. Gianfranco Follador, a direct descendant, took the estate into sparkling wine. The family says it was one of the first in the Valdobbiadene area to do so. His wife Italia Rossi, known to everyone as Rita, runs the business side, and the company is registered in her name. Their four children now run the estate. Michele leads production and innovation, and Cristina sales and marketing. Francesca, who trained at the Cerletti wine school in Conegliano, is the oenologist in charge of quality, and Emanuela runs administration and packaging design. The four are direct descendants of the Berti family, whose name is on the Nani dei Berti wine. Federico Salvador is the winemaker.

The winery sits on Via Gravette at Col San Martino, part of Farra di Soligo. This is the middle of the Conegliano Valdobbiadene zone, the hilly home of Prosecco Superiore. UNESCO listed these hills as a World Heritage site in July 2019. The soils are rock and clay. The slopes are steep, and every bunch of Glera for the Superiore wines is cut by hand. Above the family's vineyards stand the Torri di Credazzo, the medieval towers that give one of the wines its name.

The Signature line is five Valdobbiadene Prosecco Superiore DOCG wines, each from a single year. Ruiol Castei and Torri di Credazzo Cru are extra dry, the lightly sweet style. Fosélios and Nani dei Berti are dry brut. Xzero is an extra brut with no sugar left in it at all. Nani dei Berti comes from the Rive di Col San Martino, the steep slopes around the village. A Superiore di Cartizze, a Prosecco DOC Treviso line, a frizzante line and three rosés sit alongside them. There is also a line of vintage-dated spumante, the Ca' dei Noni wines, and a still red and a still white. At the Concours Mondial de Bruxelles 2025, Torri di Credazzo Cru 2024 took gold and Nani dei Berti 2024 silver. The wines are vegan-friendly.

The family has trademarked its way of working as the Gianfranco Follador Method, introduced on Michele's insight. The crushed grapes are chilled straight away to keep oxygen from dulling the fruit. The second fermentation that makes the bubbles happens in sealed tanks, the Charmat method, and takes 20 to 30 days. The wine then rests in tank for up to six months, which the family credits for a finer, longer-lasting bead.

In August 2025 Follador gained the Equalitas certificate, the Italian wine trade's sustainability standard, which covers the vineyard and the cellar. Solar panels went up in January 2024 with the aim of running production on green energy. The bottles are mostly recycled glass and the labels are paper. A new decanter for clearing the juice cuts water use. It also does away with the additives that used to be needed and then thrown out as special waste. Follador is not certified organic.

Three visits can be booked. The shortest is a guided tasting of five Superiore wines. The second adds a tour of the winery. The third ends at the family's Rustico, a country house at the foot of the Torri di Credazzo. There you taste among the vines, with food included. Visits run in the morning and mid-afternoon, must be booked ahead by email, and are given in Italian, English or German. There is wheelchair access, and dogs are welcome in the tasting rooms. The winery also hosts private events for up to about 100 guests.
