Cantina Valpolicella Negrar

Cantina Valpolicella Negrar is a growers' cooperative in Negrar, in the hills north of Verona. It was started in 1933 and now brings together about 240 families who farm the slopes around the village. Between them they work close to a thousand football pitches of vines. The best wines carry the Domìni Veneti name. Amarone is the house speciality, and one of them is named after a Roman villa found under a member's vineyard. The wineshop is open to visitors.

About Cantina Valpolicella Negrar

A cooperative works differently from a single estate. Each member family farms its own plots and brings the fruit in at harvest. The cellar then keeps the best parcels apart instead of blending everything together. That is why the range runs from an everyday Valpolicella up to single-vineyard Amarone. For a drinker it means one address covers the whole valley, from the cheap and cheerful bottle to the serious one.

The grapes are the local four. Corvina and Corvinone carry the flavour, all sour cherry and dried herb. Rondinella fills out the colour. Molinara, older and rarer now, shows up here and there. The valley's oldest habit is drying the bunches on racks through the winter before pressing them. Lose water and you concentrate everything left behind. That is how Amarone is made, and how Recioto, the sweet version, was made long before it.

Domìni Veneti is the name on the wines the cellar is proudest of. Many are tied to one hillside rather than to the valley as a whole. Jago, Casetta and Verjago name red slopes; Foscarino and Castellaro name white ones planted to Garganega for Soave. Read them as the co-op saying this hill tastes different from the next one. The style across the range is generous rather than austere, which is why it travels well and why British merchants stock it.

The Roman connection is not a marketing line. In 1887 a mosaic showing a cherub in a chariot came out of the ground here during farm work, and it now sits in Verona's archaeological museum. The vineyard involved in the modern dig belongs to a member family, and their fruit goes into an Amarone the cellar named after the villa. The first vintage was 2004 and it reached the shelves in 2011. Visitors are welcome at the wineshop on Via Ca' Salgari, and tastings run from a short introduction up to a walk through the single-hillside wines. All of them are booked ahead.
