Tasting Notes

How Follador Xzero tastes: bone dry, green apple and chalk

Xzero carries no added sugar at all, 0 grams a litre. So the fruit is green apple, pear and lemon rather than the soft peach of a Dry or Extra Dry Prosecco. Follador credits the clay and chalk of its hillside vineyards for the mineral edge, and Vivino drinkers mention green apple, lemon and saline notes most.

Nose

Green apple and pear first, then lemon and lemon peel, the notes Vivino drinkers mention most across 32 written reviews of Xzero. The IWSC judges found yellow apple and apricot on the 2022, and Slurp's note adds almond and acacia blossom.

Palate

Bone dry, with 0 grams of sugar a litre and the sharp, clean acidity that gives. Light at 11.5%, with a chalky, saline edge. Follador puts that down to the clay and chalk of its Valdobbiadene slopes, and the IWSC judges called the 2022 mineral across a well-layered palate.

Finish

Short, dry and clean, as the IWSC panel noted on the 2022. The wine takes its bubbles in tank, then rests about 120 days in the cold before bottling.

Overall

A zero-sugar Prosecco Superiore for people who find ordinary Prosecco too soft. Vivino drinkers rate Xzero 3.8 from 337 ratings and put the 2020 top at 3.9. Drink the 2022 now, well chilled, with oysters, fried starters or a plate of prosciutto.

Where Follador Xzero fits: an aperitif fizz for people who like it dry

At £15.95 and 11.5%, Xzero is a weeknight and aperitif sparkler that scores highest for food and everyday drinking. Its zero-sugar style is drier than most Prosecco drinkers expect, so it suits people who already know they like a bone-dry fizz.

Best with food 8.2/10

Zero sugar and sharp acidity make it a real food fizz for oysters, fried starters, cured meat and raw fish.

Best everyday bottle 8.0/10

About £16, light in alcohol and made for aperitivo hour; an easy midweek bottle to open.

Best value 7.5/10

Slurp charges £15.95 for a hillside Valdobbiadene DOCG with no added sugar, close to the 16.99 euros Follador charges at its own shop.

Best intro to this style 6.2/10

Light and clean at 11.5%, but drier than most Prosecco drinkers expect; better for people who already like a bone-dry fizz.

Best for an occasion 6.0/10

A DOCG Prosecco Superiore from a family house dating to 1769 dresses up a dinner, but it is not a grand celebration fizz.

Best for cellar 1.2/10

A tank-method Prosecco to drink within a year or two of release; the 2022 on sale is already at its limit.

Scoring is rule-based and deterministic. The model and weightings are documented in our Wine Fit Score methodology.

Follador Xzero 2022 and 2020: a drought year and a mild one

The 2022 on sale came from an exceptionally dry year. Rainfall ran 40 to 80 per cent below average for months and the summer was two degrees hotter than usual, so picking began earlier than the consorzio's president had seen in 46 harvests. The 2020, now out of stock, was a dry, mild year that the consorzio praised for balance and fresh acidity.

The disciplinare, the place, the label

Follador: a Valdobbiadene family making wine since 1769

The Follador family's record in the Prosecco hills starts in 1769, when Giovanni Follador was honoured for his wine by the Doge of Venice. Gianfranco Follador turned the house to sparkling wine in 1970. It still sits at Col San Martino, in the Valdobbiadene DOCG hills.

01

DOC, DOCG, IGT: what the badges mean

Italian wine law sorts bottles into a pyramid. DOCG sits at the top: tightly drawn boundaries, prescribed grapes, mandatory ageing, government tasting before release. DOC is the same idea with looser thresholds. IGT (Indicazione Geografica Tipica) is broader still, requiring only that 85% of the grapes come from the named territory.

Conegliano Valdobbiadene Prosecco is in the DOCG tier. That is not a quality verdict, it is a description of how much freedom the producer has at vinification and ageing.

  1. 01

Valdobbiadene DOCG hillside grapes, not plain-grown Prosecco DOC

    Cost up

Follador grows Xzero on the clay and chalk slopes of the Valdobbiadene DOCG, the steep hill country between Conegliano and Valdobbiadene. Farming there costs more than on the flat Prosecco DOC land.

  2. 02

A vintage-dated Extra Brut with 120 days of cold rest

    Cost up

Xzero is a single-vintage wine made in tank and given around 120 days at zero degrees before bottling, which ties up tank space longer than a quick Prosecco.

  3. 03

UK duty and VAT on an 11.5% sparkling wine

    Cost up

Of the £15.95 Slurp price, about £5.30 is tax: roughly £2.64 duty on an 11.5% sparkler plus £2.66 VAT. The rest covers Follador, shipping and the shop.

  4. 04

    Tank method, not bottle fermentation

    Cost down

Prosecco takes its bubbles in a pressurised tank, months rather than years. That is why a DOCG Xzero costs £16 where a bottle-fermented Franciacorta runs from about £20 to £30 on this site, and Champagne more again.

  5. 05

Sold direct by the estate at 16.99 euros

    Cost down

Follador sells Xzero from its own online shop at 16.99 euros, so UK shops have little room to mark it up; Slurp's £15.95 sits almost level with the estate's own price.

Perfect Pairings

Dishes that go with this wine

Food Pairing

Oysters, fried starters and cured meat: what to eat with Follador Xzero

Zero sugar and sharp acidity make Xzero a food Prosecco rather than a party one. Vivino drinkers pair it with shellfish, starters and cured meat, and Slurp sells it as an aperitif. Fried food and oysters are where a bone-dry fizz earns its keep.

Salt balance Strong match

Oysters, shellfish and smoked fish

Salt and brine in oysters or smoked salmon meet the saline, chalky edge of Xzero, and the bubbles scrub the palate clean. With no sugar there is nothing to clash with the sea.

Try with: Oysters · Scottish Smoked Salmon · Potted Shrimp · Salt and pepper prawns · More pairings →

Fat cutting Strong match

Fried starters and tempura

Sharp acidity and fine bubbles cut the fat of anything fried, from arancini to prawn tempura. A bone-dry fizz refreshes between bites the way a soft, sweeter Prosecco cannot.

Try with: Arancini · Gnocco fritto · Prawn Tempura · Pizza Fritta · More pairings →

Acidity matching Good match

Aperitivo plates and cured meat

Vivino drinkers pair Xzero with cured meat and starters, and Slurp sells it as an aperitif. The wine's acidity lifts salty prosciutto and salami, and its low alcohol keeps the evening going.

Try with: Melton Mowbray Pork Pie · Cheese board · Insalata Caprese · Gnocco fritto

Body matching Good match

Sushi, sashimi and raw fish

Light body, no sugar and citrus notes suit raw fish and rice, where a bigger or sweeter wine would smother the delicate flavours. Serve it very cold.

Try with: Nigiri Sushi · Sashimi · Ceviche · Fish Tacos

Aromatic bridge Good match

Salads, vegetables and fresh cheese

Green apple and acacia notes sit easily with tomato, basil and mozzarella, and Vivino drinkers list vegetarian dishes among its matches. The acidity handles vinegar in a salad better than most whites.

Try with: Insalata Caprese · Pumpkin risotto · Spring rolls · Cheese board

Avoid Clash

Red meat, hot curries and desserts

A bone-dry fizz tastes sour beside a steak or a rich braise, which want a red such as a Valpolicella Ripasso, and it turns thin against chilli heat. With no sugar it also fights any pudding: pour a sweet Moscato d'Asti there instead.

Skip with: Fiorentina steak · Chicken madras · Cheesecake · Brasato al Barolo · Pairing guide →

Follador, Glera and Valdobbiadene Prosecco Superiore: connections

Common Questions

Completely dry: Follador adds no sugar at all, 0 grams a litre, which is why it is called Xzero. Most Prosecco is Brut, with up to 12 grams of sugar, or Extra Dry with 12 to 17. So Xzero tastes sharper and cleaner than the Prosecco most people know.

Mostly Glera, the Prosecco grape, at 95%, with 5% Chardonnay, according to the entry Follador filed with the IWSC for the 2022. It is 11.5% alcohol and sealed with a natural cork.

Yes. It is a Valdobbiadene Prosecco Superiore DOCG, the top tier of Prosecco, grown on the hills between Conegliano and Valdobbiadene rather than the flat Prosecco DOC land. It is also vintage-dated, which the label calls Millesimato.

The Follador family at Col San Martino, in the Valdobbiadene hills. Their record goes back to 1769, when Giovanni Follador was honoured for his wine by the Doge of Venice, and Gianfranco Follador turned the house to sparkling wine in 1970.

Of the shops tracked here, only Slurp lists it, with the 2022 at £15.95, so there is no price to compare between shops. Follador's own online shop charges 16.99 euros, so the UK price is close to the estate's.

Oysters, smoked salmon, fried starters and cured meat. Its zero sugar and sharp acidity cut fat and match salt, so it works as an aperitif with arancini or prosciutto and alongside sushi. Keep it away from steak and puddings.
