The 2020 Fossa Granara Riserva, the vintage on sale

The 2020 summer swung between hot, dry spells and cool, wet ones, and the harvest came slightly early but very unevenly across the zone. Fully ripe grapes kept their aromas and had more than enough sugar for the drying.

The disciplinare, the place, the label

Cantina di Castelnuovo del Garda and its Ca' Vegar Amarone

The cellar began in April 1958 as the Cantina Sociale Veronese del Garda, a co-operative with 11 founding growers. Today it is part of the Vitevis group, and Fossa Granara is the one Amarone in its Ca' Vegar range.

01

DOC, DOCG, IGT: what the badges mean

Italian wine law sorts bottles into a pyramid. DOCG sits at the top: tightly drawn boundaries, prescribed grapes, mandatory ageing, government tasting before release. DOC is the same idea with looser thresholds. IGT (Indicazione Geografica Tipica) is broader still, requiring only that 85% of the grapes come from the named territory.

Amarone della Valpolicella is in the DOCG tier. That is not a quality verdict, it is a description of how much freedom the producer has at vinification and ageing.

02

The denomination rules, in detail

Perfect Pairings

Dishes that go with this wine

Food Pairing

Game, braised meat and lasagne with Fossa Granara Amarone

The producer's own picks are game, braised meats, roasts and lasagne, plus two Veneto dishes: pastissada de caval and pasta with duck ragù. Keep it away from hot chilli.

Body matching Strong match

Venison, pheasant and roast duck

A full, strong Amarone Riserva meets the deep flavour of venison, pheasant and duck without being drowned. Game is the first dish the producer suggests for this wine.

Try with: Venison Stew · Roast Pheasant · Roast Duck · More pairings →

Tannin softening Strong match

Braised beef and veal

Long-cooked beef and veal are soft and rich, and their fat and protein smooth the tannin of a strong red like this Amarone. The wine's velvety texture then sits easily with the sauce.

Try with: Brasato al Barolo · Ossobuco alla Milanese · Beef stew

Body matching Good match

Lasagne and rich meat ragù

A rich meat sauce needs a wine with as much weight as the pasta, and this Amarone has it. Lasagne and pasta with duck ragù are both on the producer's own list.

Try with: Lasagna · Ragu alla bolognese · Agnello Ragu Lucano · More pairings →

Salt balance Good match

Blue cheese, from Stilton to Gorgonzola

Salt in a blue cheese makes a ripe, strong red taste rounder and fruitier. A full Amarone such as Fossa Granara has the weight to stand up to Stilton or Gorgonzola.

Try with: Stilton · Blue cheese · Gorgonzola, pear, and walnut risotto

Avoid Clash

Hot curries and chilli

Chilli heat makes a strong red such as this Amarone, with at least 14% alcohol, taste hotter and more bitter. The cherry fruit falls away, so keep it for rich, savoury dishes without the heat.

Skip with: Chicken madras · Chicken jalfrezi · Green curry · Pairing guide →

Drinking + cellar

Keeping a bottle of Fossa Granara Amarone Riserva

The producer gives no drinking window for this Riserva on its sheet. It seals the bottle with a Nomacork, a synthetic stopper, not natural cork.

Decanting
30 minutes

A short splash decant softens the first-pour edge and opens the aromatics.

Serving temperature
16-18°C

Aim for the cooler end on a warm day; warmer end opens up more aromatics.

Cellar potential
High

Riserva rules mean at least four years of ageing before sale, and this wine spends 36 months in barrels, so it reaches the shop with long ageing behind it.
