About Fattoria La Maliosa

Antonella Manuli spent ten years working at the Terme di Saturnia spa resort before she farmed land of her own. Around the mid-2000s she began planning a project that would treat the Maremma gently. La Maliosa was born in 2010, certified organic from the start. The name comes from the Italian verb ammaliare, to bewitch. The farm's 170 hectares, roughly 240 football pitches, mix vineyards with olive groves, grassland and woods.

The farming follows the Metodo Corino, a patented method developed with the agronomist and researcher Lorenzo Corino. The rules are strict: native yeasts do the fermenting, nothing is added to the wine, and the soil is fed with plant material grown on the farm. The farm also measures what it preaches, tracking the biological quality of its soil and its carbon footprint. Since 2013 it has worked on soil science with an agricultural research centre in Florence. In 2022 it added SQNPI certification for sustainable farming.

The vines are old Maremma varieties: Ciliegiolo, Sangiovese and grey Cannonau for the reds, Procanico and Ansonica for the whites. The first vineyard was a 60-year-old plot rescued from semi-abandonment, now called the Vigna Madre. Every vineyard planted since has copied its mix of vines. The steepest, Vigna Corino, drops about 30 per cent across stony ground ten million years old. Across the Fiora river, near Pitigliano, a patch of white vines grows on deep volcanic ash. Wild vines still climb the trees in the farm's woods, a sign of how untouched this corner of Tuscany is.

The wines are natural Toscana IGT bottlings, orange and red among them, and the olive groves give certified organic oils. Visiting is easy. The gate is open daily from 10 to 6, and everything books online. The cheapest way in is a 15-minute speed tasting for 8 euros. Beyond that come full farm tastings, picnics on wooden decks above the vines, and e-bike or horseback tours. The StarsBOX cabins host sunset picnics in the middle of the landscape. In the village of Saturnia the farm also runs a wine bar with a zero-kilometre kitchen. Five guest rooms wait nearby in a restored 1600s house.

During the tour, our expert staff will guide you to discover the historical varieties used for our wines, illustrating the production process and the Corino Method, which guides each of our choices in the creation of natural wine and organic EVO oil. We will then move to the tasting room, where, in a welcoming and warm atmosphere, you can taste 2 of our natural wines, accompanied by a selection of cheeses from the Caseificio di Sorano e Manciano and artisanal cold cuts selected by us in the area. After picking up your picnic upon arrival at the winery, head to our new Skydeck, a large 'orientation table' that opens up a 360° view of the natural landscape of the Tuscan Maremma, from Giglio Island to Monte Amiata, from Pitigliano to Monte Argentario. Designed by Officina82, the Skydeck, unique in Maremma, has been placed at the centre of Vigna Corino, a garden vineyard located on the summit of Monte Cavallo, the highest point within the company. It takes up the circular lines of the vineyard, following them and inserting itself into the natural environment, enhancing it and creating an innovative and interactive Belvedere. An immersive experience immersed in nature and Maremma cuisine, through a journey to discover wild herbs and their uses in the kitchen. Guests will be welcomed at La Maliosa by the staff and chef Francesca, who combines culinary expertise with extensive training as a holistic practitioner in Phytoalimurgy and Wellness. We will accompany you on a walk through the farm's fields, helping you identify and pick wild herbs, explaining their characteristics, properties, and uses in the kitchen.
