DOC, DOCG, IGT: what the badges mean

Italian wine law sorts bottles into a pyramid. DOCG sits at the top: tightly drawn boundaries, prescribed grapes, mandatory ageing, government tasting before release. DOC is the same idea with looser thresholds. IGT (Indicazione Geografica Tipica) is broader still, requiring only that 85% of the grapes come from the named territory.

Toscana is in the IGT tier. That is not a quality verdict, it is a description of how much freedom the producer has at vinification and ageing.

Food Pairing
Tannin softening Strong match

Braises and stews

The dense tannins soften against slow-cooked red meat, and the meat tastes richer for it.

Try with: Beef braised in red wine

Acidity matching Good match

Pasta with game ragù

Its freshness cuts the richness of a game sauce.

Try with: Pappardelle with wild boar ragù

Salt balance Good match

Aged cheese

Its dark fruit and firm structure stand up to the salt of a cheese aged for months.

Try with: A long-aged cheese

Decanting
1 hour

A short splash decant softens the first-pour edge and opens the aromatics.

Serving temperature
16-18°C

Aim for the cooler end on a warm day; warmer end opens up more aromatics.
