Bibi Graetz
Bibi Graetz is a Tuscan winery in Fiesole, on the hill above Florence. Its founder came from an artist's background and started it in 2000. The cellar, called Aurora, sits in Piazza Mino in the centre of town, and old vines are the estate's foundation. Sangiovese leads the reds, Testamatta and Colore, while Ansonica from Isola del Giglio makes the whites. The parcels behind the reds include Vincigliata, Lamole and Montefili, and both flagships are bottled as Toscana IGT, not Chianti Classico. Visits are private and run by reservation.

About Bibi Graetz
Bibi Graetz founded his winery in 2000 on the hill of Fiesole, looking down over Florence. He came to wine from an artist's background. He moved from the family vineyards into a focused Tuscan wine project. His cellar, named Aurora, stands in Piazza Mino in the centre of Fiesole.
The reds are rooted in native Tuscan grapes. Sangiovese sits at the centre, and the estate names Canaiolo and Colorino as core varieties too. Testamatta and Colore are the key reds. Both are Toscana IGT wines from old-vine Sangiovese. The parcels behind them include Vincigliata, Lamole, Olmo, Montefili, Londa and Siena, depending on the wine.
The whites add a second Tuscan landscape. Colore Bianco and Testamatta Bianco come from Ansonica grown on Isola del Giglio. The island vines sit on granite soils close to the sea.
Some of the fruit comes from Chianti Classico sites such as Lamole and Montefili. Even so, the flagship wines are presented as Toscana IGT, not Chianti Classico DOCG.
Visits and tastings are possible, but only by reservation. The estate arranges them privately and asks guests to use the contact form on its official site. It does not publish prices or timings.
