General Tso's chicken
General Tso's chicken is American-Chinese (not Hunanese) despite the Zuo Zongtang name: battered fried chicken glazed in a sweet-sticky soy-vinegar sauce with dried chilli. The candy-glaze fry combination needs fizz pressure to cut the coat. Conegliano Valdobbiadene Prosecco Superiore and Lambrusco di Sorbara both earn the pairing; Nero d'Avola from Sicilia DOC handles the red side.

Har gow
Har gow are translucent Cantonese prawn dumplings, wheat-and-tapioca wrappers pinched into pleated crescents around chopped prawn, bamboo shoot and a trace of sesame oil. The wrapper is the subtle counterpoint to the sweet prawn. Vermentino di Gallura's saline Sardinian lift and Franciacorta's fine mousse are the two canonical Italian pairings; Falanghina works as a softer alternative.
