Tasting Notes

What Pillastro Anniversario tastes like: berry fruit, sweet spice, velvet

Laithwaites describes the 2025 as full-bodied and berry-rich, with rounded, velvety tannins and a sweet-spice finish. What sets it apart from plain Pillastro is two extra parcels of grapes: one aged six months in barrel, one left longer on the vine. Gilbert & Gaillard gave the 2021 a double gold medal, Laithwaites' US site reports.

Laithwaites describes the 2025 as berry-rich and sweet-spiced, with deep, dark fruit. Its US site described the 2021 with ripe raspberry, blackcurrant, juicy raisin and spiced vanilla. Gilbert & Gaillard picked out spice and roasted coffee over bilberries and plums in that vintage. The raisin note matches the recipe: Laithwaites says one parcel of grapes is left longer on the vine for concentration.

Full-bodied and smooth, with the rounded, velvety tannins Laithwaites notes on the 2025. The fruit is rich and berry-led. One parcel spends a full six months in barrel, which the shop says gives an extra spicy kick. Gilbert & Gaillard called the 2021 "velvety, nervy and concentrated". The 2025 is 12.9 per cent alcohol.

Finish

Sweet spice closes it, as Laithwaites' note on the 2025 says, with the warmth and depth the shop describes. Laithwaites' US site called the finish of the 2021 long and velvety.

Overall

A richer, spicier take on Pillastro, first made to mark Pillastro's 25th anniversary and kept in the range because it proved so popular, Laithwaites says. Vivino drinkers rate it 4.1 from 90 ratings, 69 of them four stars, and Laithwaites customers give it 4.7 out of 5 from 16 reviews. Drink the 2025 by the end of 2031.

How Pillastro Anniversario scores for food, value and keeping

Its strongest cards are Best intro to this style and Best with food. Soft, full-bodied and fruit-led, it is easy to like, and Laithwaites calls it the ideal red for a hearty casserole.

Best intro to this style 8.0/10

Soft, velvety and fruit-led, at 12.9 per cent alcohol, it is an easy first taste of Puglia's Primitivo. Laithwaites customers rate it 4.7 out of 5 from 16 reviews, and Vivino drinkers 4.1 from 90 ratings.

Best with food 7.4/10

Full-bodied with soft, rounded tannins, it suits hearty meat dishes: Laithwaites names a casserole, and Vivino lists beef, lamb, poultry and pasta. It is less at home with fish or hot spice.

Best everyday bottle 6.6/10

Soft and easy enough for a weeknight stew, but at £17 a bottle it is more of a weekend red. A mixed dozen from Laithwaites costs less per bottle, which makes it easier to keep a few in the rack.

Best value 4.8/10

At £17 it costs more than the middle price, about £14, of the Puglia IGP bottles we track in UK shops. Laithwaites' own page offers a lower price per bottle on a mixed dozen.

Best for an occasion 4.5/10

A special edition first made to mark 25 years of Pillastro, so it brings a story to the table. It is still a £17 Puglia IGP red, better for a Sunday lunch than a big celebration.

Best for cellar 3.0/10

Made to drink young: the Puglia IGP rules set no minimum ageing, and Laithwaites gives the 2025 a drink-by date of 31 December 2031. Open it over the next five years or so rather than laying it down.

Scoring is rule-based and deterministic. The model and weightings are documented in our Wine Fit Score methodology.

Pillastro Anniversario 2025: a hot, dry summer in Puglia

Laithwaites sells only the 2025. Coldiretti, Puglia's farmers' union, reported above-average heat and low humidity as the Primitivo harvest began in late August 2025, with healthy, even ripening. Laithwaites gives the bottle a drink-by date of 31 December 2031.

Puglia's farmers' union, Coldiretti, reported the Primitivo harvest under way by late August 2025, after above-average heat and low humidity gave healthy, even ripening. The Primitivo di Manduria consortium, which guards that wine's name across 18 towns in Taranto and Brindisi provinces, called its grapes healthy and of excellent quality once picking ended.

The disciplinare, the place, the label

Why Pillastro Anniversario costs £17, not £13.49 like plain Pillastro

The Anniversario is Pillastro with two extra parcels of grapes, one barrel-aged and one late-picked, according to Laithwaites. Cantine Due Palme, the co-operative that makes it, pools grapes from about a thousand member growers. UK tax takes about a third of the £17 price.

01

DOC, DOCG, IGT: what the badges mean

Italian wine law sorts bottles into a pyramid. DOCG sits at the top: tightly drawn boundaries, prescribed grapes, mandatory ageing, government tasting before release. DOC is the same idea with looser thresholds. IGT (Indicazione Geografica Tipica) is broader still, requiring only that 85% of the grapes come from the named territory.

Puglia is in the IGT tier. That is not a quality verdict, it is a description of how much freedom the producer has at vinification and ageing.

One parcel aged a full six months in barrel

    Cost up

Laithwaites says one of the two parcels added to the blend spends six months in barrel, for extra spice. Barrels and cellar time cost money, which helps explain the £3.51 gap over plain Pillastro at £13.49.

  2. 02

One parcel of grapes left longer on the vine

    Cost up

The second parcel comes from grapes left longer on the vine for concentration, Laithwaites says. Laithwaites' US site said that parcel dried on the vine in the 2021, and drier grapes give less juice from the same crop.

  3. 03

A co-operative of about a thousand Salento growers

    Cost down

Cantine Due Palme, founded by Angelo Maci in 1989, pools grapes from about a thousand member growers. Working at that scale spreads fixed costs over many more bottles than a single estate could fill.

  4. 04

No ageing rule, so the 2025 is on sale about a year after picking

    Cost down

The Puglia IGP rules set no minimum ageing. Puglia's Primitivo harvest began in late August 2025, and Laithwaites has the 2025 in stock in September 2026. Less time in the cellar means less money tied up in stock.

  5. 05

UK duty and VAT inside the £17 price

    Cost up

Of the £17 price, £2.96 is duty at 12.9 per cent alcohol and £2.83 is VAT, together about a third of what you pay. Duty is charged at £30.62 per litre of pure alcohol.

Perfect Pairings

Dishes that go with this wine

Food Pairing

Pillastro Anniversario with stews, ragù and grilled lamb

Laithwaites calls it the ideal red for a hearty casserole, and Vivino lists beef, lamb, poultry and pasta as matches. Its full body and soft tannins suit slow-cooked and grilled meat far better than fish or chilli heat.

Body matching Strong match

Slow-cooked stews and casseroles

A full-bodied Primitivo like this meets the weight of a slow braise, so neither the dish nor the wine takes over. Laithwaites calls it the ideal red for a hearty casserole. Its soft, rounded tannins sit easily with meat that falls apart.

Try with: Spezzatino di pecora · Agnello Ragu Lucano · Carbonade · Beef stew · More pairings →

Aromatic bridge Strong match

Ragù, baked pasta and tomato sauces

Rich berry fruit and sweet spice echo the sweetness of a rich tomato and meat sauce. Vivino lists pasta and beef among this Puglia red's matches. A meat ragù also gives the soft tannins something to hold on to.

Try with: Ragu alla bolognese · Lasagna · Anelletti al forno · Pasta alla Norma · More pairings →

Tannin softening Good match

Grilled and roast lamb, beef and pork

Fat and protein soften tannin, so grilled meat makes this Primitivo taste rounder and fruitier. Vivino lists beef and lamb as matches, and Wine-Searcher suggests beef and venison. Charred edges pick up the spice from the barrel-aged parcel.

Try with: Arrosticini · Fiorentina steak · Porchetta · Rack of lamb · More pairings →

Salt balance Good match

Hard and aged cheeses

Salt in a hard cheese makes a red taste softer and fruitier. A southern Italian Caciocavallo or a mature Pecorino meets this Primitivo's berry fruit head on. Laithwaites' US site names aged cheese as a match for the 2021.

Try with: Caciocavallo farcito · Pecorino sardo e pan carasau · Frico · Strong cheddar cheese · More pairings →

Body matching Good match

Pizza, calzone and panzerotti

Tomato, melted cheese and cured meat need a red with plenty of fruit, and this Puglia Primitivo has it. Laithwaites' US site suggests pizza for the 2021, especially meaty ones. Panzerotti, a street snack from Puglia, keep the match in the wine's home region.

Try with: Calzone · Panzerotti · Pizza Margherita · Focaccia Barese · More pairings →

Avoid Clash

Hot curries and raw fish

Chilli heat makes a red's alcohol and tannin feel harsher and strips out the fruit. A full-bodied Primitivo also swamps delicate raw fish. Keep this bottle for meat, pasta and cheese.

Skip with: Chicken madras · Chicken jalfrezi · Green curry · Sashimi · Pairing guide →

Common Questions

It is a special edition of Pillastro Primitivo, the red Laithwaites calls its No.1 best-selling Italian red. Laithwaites says it was first made to mark Pillastro's 25th anniversary and kept because it proved so popular. Cantine Due Palme, a growers' co-operative in Salento, makes it as a Puglia IGP red from the Primitivo grape.

It adds two special parcels of grapes to the Pillastro blend, Laithwaites says. One spends a full six months in barrel for extra spice, and the other comes from grapes left longer on the vine for concentration. Laithwaites lists the 2025 as full-bodied, where plain Pillastro is medium to full-bodied. For the 2025s, it costs £17 against £13.49, and its drink-by date is 2031 against 2029.

It tastes of rich berry fruit and sweet spice, with rounded, velvety tannins, according to Laithwaites' note on the 2025. Laithwaites' US site described the 2021 with raspberry, blackcurrant, juicy raisin and spiced vanilla. Gilbert & Gaillard found spice and roasted coffee over bilberries and plums in the 2021. The 2025 is 12.9 per cent alcohol.

Slow-cooked meat is the surest match: Laithwaites calls it the ideal red for a hearty casserole. Vivino lists beef, lamb, poultry and pasta among its matches. A lamb ragù, a beef stew or a meaty lasagne suits its full body and soft tannins. Keep it away from hot curries, which make a red's alcohol taste hotter.

Laithwaites is the one UK shop we track for it, so there is no price to compare between shops. It sells the 2025 at £17 a bottle. Laithwaites' own page also offers a lower price per bottle when you buy 12 or more mixed bottles.

Drink the 2025 by the end of 2031, the drink-by date Laithwaites gives it. That is about six years from the harvest, so enjoy it while it is young: the Puglia IGP rules set no minimum ageing.
