Tasting Notes

What Collezione di Paolo Bianco Vergine tastes like

The Valdichiana Toscana rules describe a Bianco Vergine as straw coloured, dry and sometimes finishing on a touch of bitter almond, with at least 10% alcohol. Paolo Masi's 2025 fits that picture at 12%, led by Trebbiano Toscano with some Malvasia.

Nose

Lemon and pear first, then green apple, melon and a light almond and herb note. It is a clean, quiet scent, typical of a young Trebbiano Toscano white from the Chiana valley sold the year after its harvest, as this 2025 is.

Palate

Dry and light, with 12% alcohol and fresh acidity that keeps it lively. Pear, melon and lemon run across the tongue, with a stony edge behind the fruit. The grapes come from the Chiana valley, as the appellation rules require; Paolo Masi's own estate is at Rufina, in the Apennine foothills.

Finish

Clean and quick, closing on lemon with a faint bitter almond, the very note the appellation's rules name for a Bianco Vergine.

Overall

An everyday dry white, made by Paolo Masi of Fattoria di Basciano for a shop-owned label from Chiana valley grapes. It is a simple, well-liked fresh white rather than a wine to think about. The one shop on this page asks £12.99 for the 2025. Serve it cold, drink it by the end of 2027, and pour it with white fish, a tomato salad or a creamy pasta.

Wine fit score

Where Collezione di Paolo Bianco Vergine fits

Its strongest cards are Everyday and Beginner: a simple, dry, fresh white at £12.99 that asks nothing of the drinker. Food is strong too, with fish, salads and creamy pasta.

Best intro to this style 8.8/10

Dry, light and fruity with no oak flavour to get used to and nothing bitter beyond a touch of almond. An easy first Italian white.

Best everyday bottle 8.8/10

Simple, fresh, under £13 and happy with weeknight fish, pasta or a salad. This is a fridge-door white, not a special-occasion bottle.

Best with food 8.0/10

Fresh acidity, low weight and a dry finish suit fish, salads, creamy pasta and salty starters. Only hot spice and big red-meat dishes fall outside its range.

Best value 5.5/10

At £12.99 from the one shop on this page, it costs more than a Bianco Vergine usually does in Italy. It is about what a shop's own Tuscan white costs in the UK: fair rather than cheap.

Best for an occasion 3.0/10

A shop-owned label from an everyday DOC, not a name that impresses at the table. Good as the aperitif before a dinner, not the bottle you give.

Best for cellar 1.2/10

A fresh white sold the year after harvest, with no ageing rule behind it. Drink the 2025 by the end of 2027; it gains nothing in a cellar.

Scoring is rule-based and deterministic. The model and weightings are documented in our Wine Fit Score methodology.

The disciplinare, the place, the label

Valdichiana Toscana DOC: the rules behind a Bianco Vergine

The rules ask for at least 20% Trebbiano Toscano. Chardonnay, Pinot Bianco, Grechetto and Pinot Grigio may make up to 80%, and other Tuscan white grapes up to 15%. The grapes must come from twelve communes of the Chiana valley, in the provinces of Arezzo and Siena, at no more than 12 tonnes a hectare.

01

DOC, DOCG, IGT: what the badges mean

Italian wine law sorts bottles into a pyramid. DOCG sits at the top: tightly drawn boundaries, prescribed grapes, mandatory ageing, government tasting before release. DOC is the same idea with looser thresholds. IGT (Indicazione Geografica Tipica) is broader still, requiring only that 85% of the grapes come from the named territory.

Valdichiana Toscana is in the DOC tier. That is not a quality verdict, it is a description of how much freedom the producer has at vinification and ageing.

02

The denomination rules, in detail

Chiana valley grapes under a generous yield rule

    Cost down

The Valdichiana Toscana rules allow up to 12 tonnes of white grapes a hectare and 70 litres of wine from every 100 kg. Grapes for a Bianco Vergine are not scarce, so they cost little.

  3. 03

Sold the year after harvest, no cellar time

    Cost down

The 2025 is on sale about a year after its harvest, and the appellation sets no ageing rule for a Bianco Vergine, so no years of storage sit in the price.

Food Pairing

Fresh acidity, little weight: what to eat with this Bianco Vergine

Lemon-fresh acidity and a light body make this a white for plain food: steamed or fried fish, tomato and basil salads, and cream or cheese pasta that wants cutting through. Keep it away from hot spice.

Acidity matching Strong match

Steamed, grilled and fried white fish

The lemon-fresh acidity of this Trebbiano Toscano white does what a squeeze of lemon does to fish: it lifts the flesh and cleans the batter or oil off the tongue. The wine is light, so it never covers a delicate fillet.

Try with: Steamed sea bass · Fish and Chips · Salmon · Salt and pepper squid

Fat cutting Strong match

Creamy pasta and white risotto

Cream, butter and cheese coat the mouth; the dry, acid-led Bianco Vergine cuts through that coating with each sip, so the next forkful tastes fresh again. Its pear and lemon fruit sits quietly beside the dish instead of fighting it.

Try with: Pasta alla carbonara · Risotto alla Milanese · Pumpkin risotto · More pairings →

Aromatic bridge Good match

Tomato, basil and herb starters

The herb and almond note in this Tuscan white meets basil and raw tomato halfway. Both sides are fresh and green, and the wine's acidity matches the tomato's, so neither tastes sour next to the other.

Try with: Insalata Caprese · Trofie al pesto · Pappa al Pomodoro · More pairings →

Salt balance Good match

Salty starters and cured meat

Salt makes a dry white taste rounder and fruitier, and this light Valdichiana white has the acidity to rinse away the fat of fried dough or a tuna sauce. It is the aperitif role the wine was made for.

Try with: Gnocco fritto · Vitello Tonnato · Arancini · More pairings →

Body matching Good match

Light fish and chicken dishes from further afield

A 12% white with little weight needs food of the same weight. Steamed fish, lemon chicken and light tempura sit at that level, and the Trebbiano Toscano acidity takes the place of the lemon wedge on the side.

Try with: Steamed sea bass · Lemon chicken · Prawn Tempura · Fish Tacos

Avoid Clash

Hot curries and chilli heat

Chilli heat makes a light, dry white taste thin and sharp, and the alcohol fans the burn rather than cooling it. A fruitier, off-dry Italian white such as a Moscato d'Asti handles hot food far better than this Bianco Vergine.

Skip with: Chicken madras · Crispy chilli beef · Green curry · Szechuan chicken · Pairing guide →

Drinking + cellar

Not one for the cellar: drink the 2025 by 2027

This is a fresh white sold the year after its harvest. Keep it in the fridge door for a few weeks, not in a cellar for years, and open it by the end of 2027.

Common Questions

Paolo Masi, whose family estate is Fattoria di Basciano in the high hills of Rufina, makes it for a shop-owned label. He took the estate over from his father, Renzo, and also makes the label's Chianti. The grapes for this white come from the Chiana valley, which the appellation rules fix, not from Rufina.

Trebbiano Toscano leads, with some Malvasia; the exact shares are not published. The Valdichiana Toscana rules ask for at least 20% Trebbiano Toscano. Chardonnay, Pinot Bianco, Grechetto and Pinot Grigio may make up to 80%, and other Tuscan white grapes up to 15%.

Yes. Bianco Vergine is a type of the Valdichiana Toscana DOC, the appellation of the Chiana valley between Arezzo and Montepulciano. The DOC was recognised in 1972 for the Bianco Vergine type alone and was then called Bianco Vergine Valdichiana. The label still carries that older name.

Dry, light and fresh: lemon, pear and green apple, a stony edge, and a touch of almond on the finish, with 12% alcohol. It is pale straw with a green tint. Serve it well chilled and drink it young.

Plain fish, tomato and basil salads, and creamy pasta or white risotto. Its fresh acidity cuts through cream and lifts simple fish. Keep it away from hot curries, which make a light white taste thin.

Laithwaites is the one shop on this page, with the 2025 at £12.99 a bottle. Collezione di Paolo is that shop's own label, so there is no price to compare between shops here. Drink the 2025 by the end of 2027.
