Braised meat and game
Silky tannins and ripe fruit meet long-cooked meat and game without overpowering them.
Try with: Beef braised in red wine, wild boar, lamb
Risotto with cheese and truffle
A big, ripe red with the weight for rich risotto, melted cheese and truffle.
Try with: Risotto with truffle, cheese fondue
Dark chocolate
The wine's own chocolate note links it to bitter chocolate.
Try with: Dark chocolate
A short splash decant softens the first-pour edge and opens the aromatics.
Aim for the cooler end on a warm day; warmer end opens up more aromatics.
