How Cecchi's Calipte rosé tastes
Cecchi press Sangiovese the way most people press a white grape, with short, frequent pump-overs in steel and no barrel at any point. The wine then rests two months in bottle before it goes on sale. That is why Calipte smells of acacia flower and raspberry rather than wood.

Acacia flower comes first, the note Cecchi lead with on their own sheet, then raspberry and a squeeze of bergamot. Falstaff's panel found eucalyptus and white flowers in the 2024, and Tannico picks out violet and dog rose. There is no smell of wood at all, because the wine never goes near a barrel.
Light and properly dry, with about four grams of sugar in a litre and plenty of acidity behind the fruit. Strawberry and pink grapefruit lead, with a savoury edge that comes off the Sangiovese skins. The fruit stays taut because the vines sit on loose sandy Maremma soil that holds little water, and sea breezes cool the nights. At 12% this is one of the lighter Tuscan rosés on the shelf.
Short, clean and faintly bitter, the small twist Falstaff's tasters noted in the 2024. It asks for another sip rather than a long think.

Vino.com carries both the 2024 and the 2025 on this page. In Italy the wine sells for about 13 euros, and Mercanti in Bristol lists a six-bottle trade case for UK restaurants and shops. With a rosé this light, the newest vintage on the shelf is the one to buy.

Cecchi's own harvest note calls 2025 a balanced year. A wet spring filled the water table, then a cool summer brought scattered rain. 2024 turned hot and dry after a wet start, with cold nights that held the acidity in place. Falstaff scored the 2024 at 89 points.

Cecchi call 2025 a balanced year on the Tuscan coast. Heavy spring rain filled the water table, then a cool summer brought only scattered showers, and July rain pulled June's heat back down. The estate reports ripe fruit with good acidity, and Vivino drinkers rate this the best year yet for Calipte.

A wet winter and cool spring were followed by a hot, dry summer, with cold nights that kept the acidity in place. Falstaff gave this vintage 89 points in May 2025 and found a light bitter twist on the finish. It was drinking well through the 2025 summer and should hold into 2027.

Cecchi's own pairings for Calipte, and what else works
Cecchi's technical sheet sends Calipte to the aperitivo first, then to delicate fish and shellfish, white meat, risotto and vegetable dishes. Tannico adds salumi and schiacciata with prosciutto. The reason is the same every time: plenty of acidity and no tannin at all.
Aperitivo plates: bread, tomato and mozzarella
Acidity is the whole point of this wine, and salty bread with tomato is what it was built for. The acid resets your mouth between bites so the third slice tastes like the first. Cecchi name the aperitivo as the first use on their own sheet.

Mussels, clams and other shellfish

Fried antipasti and cured pork
Fried dough and fatty pork coat your tongue, and acid is what strips the coating away. This wine is light enough that it cuts without piling weight on top of a rich plate. Tannico point it at salumi and savoury tarts for the same reason.

The bergamot and acacia in the glass run straight into lemon, caper and herb sauces on the plate. That shared citrus note is the bridge, and it makes cold veal or whipped salt cod taste brighter. Cecchi name white meat among the wine's best matches.

Chilli heat and long, heavy braises
Chilli makes alcohol burn, and although 12% is low, there is no sweetness here to soften the heat. Long braises and thick steak go the other way, and simply flatten a wine this light. For chilli, pour a lightly sweet white like Moscato d'Asti. For the steak, pour a firm red like Chianti Classico.

Tannico puts the ideal drinking window at 2026 to 2028. The reviewer at Grape to Glass tasted the 2024 in July 2025 and gave it another 12 to 18 months. Neither is cellar advice. Drink this one young and cold, soon after you buy it.

Common Questions
Sangiovese, and nothing else. Cecchi press it the way they would press a white grape, so the juice spends very little time on the skins. That is why the colour is pale pink rather than red.
The Maremma, on Tuscany's southern coast. Cecchi have farmed the Val delle Rose estate there since 1996. The vines sit on loose sandy soil that holds little water, cooled at night by breezes off the sea.
Dry. It carries about four grams of sugar in a litre, which is dry even by rosé standards. The fruit flavour you taste comes from the grape, not from sugar.
