Winestillery is a craft distillery in Gaiole in Chianti, in the heart of the Chianti Classico region. The Chioccioli Altadonna family call it a vinstilleria: a winery and a distillery in one. Every spirit here, from gin to vermouth, starts from the family's own wine. Enrico Chioccioli Altadonna, a lawyer who left the law for the still, runs it with his father Stefano and his brother Niccolo. The spirits come in small batches from a 500-litre copper still, and tours, tastings and cocktail classes run by appointment.
Book a visitThe idea belongs to Enrico Chioccioli Altadonna, a lawyer who left the law for the still. He learned his craft at a bourbon distillery in Brooklyn, then trained as a master distiller at the Conegliano wine school. He took an oenology diploma in Bordeaux and worked in three distilleries in Cognac. Back home, he opened Winestillery with his father and brother.
Wine runs deep in the family. Father Stefano Chioccioli has been a consultant winemaker of international standing for more than 30 years. Wines he has signed have taken more than 100 Tre Bicchieri awards from Gambero Rosso, with scores up to a perfect 100 from Robert Parker. Enrico's brother Niccolo is a graduate in viticulture and oenology. He manages the family vineyards and cellar, and his wine is the base for every bottle the distillery fills. They call the approach grape to glass.
The spirits are made in small batches in Bacco, a 500-litre copper pot still built to order by Frilli, a Tuscan firm with more than a century of history. The range runs from London Dry and Old Tom gins to Tuscan vermouths, a bitter and a vodka, all natural and nothing added. The still can run two different set-ups, the Bennet method and a Carter Head, which pull different characters from the same base wine.
The distillery stands in Gaiole in Chianti, a village deep in the hills between Florence and Siena. Tours and tastings run by appointment. The family show the still at work, tell the story, and pour the full collection.
