Pietrarizzo is a named vineyard district (contrada) in the commune of Castiglione di Sicilia on Etna's north slope, at 650 to 700 metres. Its rocky soil comes from the decomposed 1908 lava flow, and Tornatore bottles it alone as a single-contrada Etna Rosso DOC because the estate ranks it among its finest red-grape sites.
It is 100% Nerello Mascalese, confirmed by Tornatore's technical sheet. Etna DOC only requires 80%, allowing up to 20% Nerello Cappuccio, so bottling the cru as pure Nerello Mascalese is a deliberate choice that keeps the contrada's character front and centre.
Hand-picked grapes are sorted on a belt, destemmed but not fully crushed, then macerated for 10 to 12 days in conical wooden vats at 22 to 25C with manual punch-downs. The wine spends more than a year in 25-hectolitre botti and cement, plus about three months in bottle: large neutral oak preserves the aromatics rather than flavouring them.
