The production rules demands at least 80% Nerello Mascalese, caps red yields at 9 tonnes per hectare and requires a release tasting before sale. Pietrarizzo is 100% Nerello Mascalese at 6 tonnes, from one named vineyard district.

Tornatore declares 60 q/ha at Pietrarizzo, a third under the 90 quintals Etna DOC allows. The vineyard yields far less wine than the Etna DOC norm.
Grapes are picked by hand into small crates in the second half of October and sorted manually on a belt before whole-grape fermentation. That is slope labour flatland machine-farmed reds never carry.
Each vintage spends more than 12 months in large oak and cement, plus about 3 months in bottle. That ties up cellar space and capital before Pietrarizzo is released.
With 100 hectares, the biggest holding in Etna DOC, Tornatore spreads winery overheads across volume. The cellar door is 27 euros and UK listings sit only a little above at £25.91 to £29.05.

Hand-picked grapes are sorted on a belt, destemmed but not fully crushed. They then soak on their skins for 10 to 12 days in conical wooden vats at 22 to 25C, the skins pushed down by hand. The wine spends more than a year in 2,500-litre oak casks and cement, plus about three months in bottle. Large neutral oak preserves the aromatics rather than flavouring them.
