Tasting Notes

Linden, lemon and lava: tasting Terre Nere's Etna Bianco

Marco de Grazia's white grew out of the old interplanted vineyards of Etna's north slope. The estate sheet reads floral first, linden blossom above all, then a fresh, salty, mineral palate; Vivino's 8,992 ratings echo it with stone, citrus and orchard fruit.

The estate sheet reads floral first, linden blossom above all, with chamomile and elderflower tones behind it. Lemon and white peach follow, and Vivino's 1,607 written notes reach most often for stone, citrus and orchard fruit. With air a flinty, ash-like edge from the volcanic soils comes through.

Palate

Light-bodied and bone dry at 12.5%, opening with the fresh, salty attack the producer's sheet promises. Cool fermentation in steel, and no wood at all, keeps green apple and grapefruit primary over wet-stone minerality drawn from black volcanic sands at 600 to 900 metres. The acidity is mountain-bright without turning sharp.

Finish

Saline and stony rather than fruity, with good length for the alcohol level and a gentle bitter-almond close. Callmewine's tasters describe the finale as recalling 'the sea and the volcano'.

Overall

This is the entry point to Terre Nere's whites, 55,000 bottles a year, and the crowd agrees with the critics: 3.9 on Vivino across nearly 9,000 ratings, with James Suckling at 94 for the 2024 and 95 for the 2023. Drink it within three or four years of harvest, though de Grazia insists the terroir deepens as it ages.

Wine fit score

How this Etna Bianco scores as an Italian white

The scores below lean on what the sources document: 12.5% alcohol, steel-only vinification, 6 to 7 tonne yields and a £19 to £30 UK price band make this a table wine first and a cellar piece only briefly.

Best with food 8.8/10

Bone-dry, 12.5% and salty-fresh with no oak: the producer's own matches run from fish and rabbit to prosciutto e melone, and steel-only vinification keeps it flexible from raw shellfish to fried antipasti.

Best value 8.4/10

No price aggregate exists, so benchmarked editorially: the 2025 lists at £19.08 (8wines) against £24 to £30 for the same label across UK retail (Good Wine Shop £27.25, Millesima £27.40, Hedonism £30), well under this wine's own UK median.

Best intro to this style 7.0/10

Approachable weight and gentle 12.5% alcohol, but Carricante's saline, bone-dry austerity sits further from supermarket Pinot Grigio than the price suggests; best once fruit sweetness has been traded for volcanic minerality.

Best everyday bottle 6.6/10

Light, fresh and food-flexible, and the 8wines 2025 price of £19.08 sits at weeknight level; most UK listings at £27 to £30 push it toward considered rather than daily drinking.

Best for an occasion 6.3/10

A benchmark producer and a 95-point 2023 (Suckling, via 8wines) give it dinner-party credibility, but as the estate's 55,000-bottle entry white it stops short of statement status; the contrada whites carry that role.

Best for cellar 5.2/10

Steel-raised DOC white with no mandated ageing, yet de Grazia states the terroir emerges with age and Suckling scores run 92 to 95 across 2016 to 2024; three to four years is confident, beyond that the contrada whites take over.

Scoring is rule-based and deterministic. The model and weightings are documented in our Wine Fit Score methodology.

2024 and 2025: two faces of Etna's north slope

The estate's own harvest reports frame both years. 2024 endured a snowless winter and summer drought before a cool, dry October delivered whites of rare aromatic purity; 2025 ran a week later and slower, and reads fresher and more restrained.

A cooler, more classic season than 2024: budbreak ran a week later and ripening was slow and even, with harvest from 23 September to 21 October. The estate expects whites fresher and less explosive than the 2024, built on the balance of that gradual ripening.

A snowless, drought winter and a bone-dry summer tested the vines before light September rain and a cool, dry October brought impeccably healthy fruit; harvest ran 20 September to 18 October. The estate's report finds in the whites an aromatic purity rarely observed, with lively freshness, and James Suckling rated this vintage 94.

The disciplinare, the place, the label

The Etna DOC rules behind this bottle

Etna DOC caps yields at 9 tonnes per hectare and requires a release tasting before wines carry the name. Terre Nere goes further: its sheet declares 6 to 7 tonnes from parcels across Randazzo, Castiglione di Sicilia, Biancavilla and Milo.

01

DOC, DOCG, IGT: what the badges mean

Italian wine law sorts bottles into a pyramid. DOCG sits at the top: tightly drawn boundaries, prescribed grapes, mandatory ageing, government tasting before release. DOC is the same idea with looser thresholds. IGT (Indicazione Geografica Tipica) is broader still, requiring only that 85% of the grapes come from the named territory.

Etna is in the DOC tier. That is not a quality verdict, it is a description of how much freedom the producer has at vinification and ageing.

02

  1. 01

Mountain viticulture at 600 to 900 m on Etna's north slope

    Cost up

The producer's sheet lists alberello-trained parcels on volcanic slopes between 600 and 900 metres, farmed and picked by hand where mechanisation is impractical.

  2. 02

Yields held to 6-7 tonnes per hectare, under the DOC ceiling

    Cost up

Etna DOC allows 9 tonnes per hectare; the estate's technical sheet declares 6 to 7, so each vine carries less fruit and each of the 55,000 bottles costs more to grow.

  3. 03

Old-vine field-blend fruit, some parcels 80 years and more

    Cost up

The blend draws on white vines interplanted among old Nerello, and the 2024 harvest report describes hand irrigation of drought-stressed vines, costly farming the price must absorb.

  4. 04

Steel-only vinification, no barrels to buy or house

    Cost down

Soft pressing and low-temperature fermentation in steel vats, with no oak programme, keep cellar costs modest and hold this below the estate's contrada whites.

  5. 05

UK duty and VAT on a £19 to £30 bottle

    Cost up

At 12.5% ABV, duty is £2.87 a bottle at February 2026 rates (per Hedonism's published duty table), plus 20% VAT: roughly £6 of the £19.08 8wines price is tax.

Perfect Pairings

Dishes that go with this wine

Food Pairing

Salt, acid and seafood: dishes for a Carricante blend

The producer's matches run from fish, chicken and rabbit to prosciutto e melone and seafood risotto, and Vivino drinkers land on shellfish and antipasti. The thread is the same: fresh acidity and a saline finish that meet the sea halfway.

Acidity matching Strong match

Sicilian swordfish and island seafood

Grilled pesce spada with capers and tomato needs a white with cutting acidity and no oak to compete. Terre Nere's steel-raised Carricante blend brings exactly that, and its salty mineral edge from Etna's volcanic sands echoes the char and the caper brine.

Try with: Pesce spada alla Siciliana · Fregula ai frutti di mare · Impepata di cozze · More pairings →

Salt balance Strong match

Oysters and the raw bar

The producer's sheet calls the palate fresh and salty, and that salinity is the bridge: the wine meets briny oysters and raw fish on their own terms instead of fighting them. At 12.5% with bone-dry citrus, it refreshes rather than coats.

Try with: Oysters · Sashimi · Nigiri Sushi · More pairings →

Fat cutting Good match

Fried Sicilian starters

Arancini and other fried antipasti coat the mouth with richness that this wine's bright acidity scrubs away. With no barrel weight, only cool-fermented steel freshness, each sip resets the palate for the next bite.

Try with: Arancini · Pizza Fritta · Gnocco fritto · More pairings →

Body matching Good match

Gently cooked white fish

De Grazia's own advice is that fish, flesh or fowl all work 'if very gently cooked'. A light-bodied white from 600 to 900 metres will not overpower steamed or poached fish, and its wet-stone minerality flatters delicate broths.

Try with: Steamed sea bass · Brodetto alla giuliese · Baccala Mantecato · More pairings →

Aromatic bridge Good match

Prosciutto e melone and the antipasti table

The estate lists prosciutto and melon, and salami with figs, among its own matches: the wine's linden-blossom aromatics pick up the fruit while its acidity balances the cure. Creamy mozzarella and cold veal find the same bridge.

Try with: Insalata Caprese · Vitello Tonnato · Focaccia Genovese · More pairings →

Avoid Clash

Chilli heat, heavy braises and sweet glazes

Serious chilli burn flattens a 12.5% white built on florality and salt, while long-braised red meat simply outweighs it. Sweet-and-sour glazes clash with its bone-dry, saline finish; pour it with the seafood course instead.

Skip with: Goan fish curry · Brasato al Barolo · Sweet and sour prawns · Pairing guide →

Drinking + cellar

A short window that rewards a little patience

This is the estate's drink-young white, yet de Grazia writes that with age 'the nobility of its terroir emerges'. Suckling scores of 92 to 95 across recent vintages back a confident three to four years from harvest.

Common Questions

The current producer sheet lists 70% Carricante with 20% Catarratto, 5% Grecanico and 5% Inzolia, plus a trace of Minnella in the older parcels. The blend descends from the white vines traditionally interplanted among Nerello in Etna's old vineyards, which Marco de Grazia began bottling separately in 2005.

Expect a light-bodied, bone-dry white at around 12.5% alcohol: linden blossom and lemon on the nose, green apple and white peach on the palate, and the salty, wet-stone finish of volcanic soils. Vivino's 8,992 ratings average 3.9, with mineral, citrus and orchard-fruit notes the most cited.

It is built to drink young: steel-vinified and released the spring after harvest. That said, de Grazia writes that with age 'the nobility of its terroir emerges', and the 2024 and 2025 will hold comfortably three to four years from the vintage.

The producer's own matches are fish, chicken and rabbit, prosciutto e melone, salami with figs, seafood pasta and risotto. Its fresh acidity and saline finish also make it a natural with oysters, raw fish and grilled Sicilian swordfish.

Live UK-facing listings run from £19.08 at 8wines for the 2025 up to about £30 at Hedonism and Decantalo. Around £6 of a £19 bottle is UK duty and VAT, so the wine itself represents strong value from a benchmark Etna estate.

The estate farms organically across its Etna vineyards, and Italian merchant Callmewine lists this wine among its organic selections. The producer's recent harvest reports also describe systematic organic fertilisation of the soils.
