Full-bodied, soft and balanced. The destemmed grapes spend about two days on their skins at 25°C before a gentle pressing. The wine is rich in velvety tannin, and at 15% alcohol it feels warm and round rather than sharp.

Finish

The finish is pleasant and lasting, warmed by the 15% alcohol.

Overall

A big, soft Primitivo for drinking young: we would open the 2025 between 2026 and 2028. Salsedine is the Puglia line of Cantine NAE, made with small local partner producers near Taranto. Drinkers rate it steadily well, with very few low marks.

How Salsedine Primitivo scores for food, value and more

Salsedine Primitivo scores highest as Best intro to this style and Best with food. It is soft and ripe, so it is easy to like, and its full body at 15% calls for hearty dishes.

Best intro to this style 7.4/10

Soft, ripe and easy to like, with wild berries, coffee and velvety tannins rather than hard grip. A friendly first taste of Puglia's best-known grape, though 15% alcohol is high for a newcomer.

Best with food 7.0/10

A full-bodied, soft Primitivo with velvety tannins and 15% alcohol. It shines with rich food such as ragù, grilled red meat, game and aged cheese, but it is too big for delicate dishes and too strong for fiery chilli.

Best everyday bottle 5.8/10

Easy to drink with a weeknight ragù or steak, but at £19.50 and 15% alcohol it is more of a weekend bottle than a daily one.

Best value 4.0/10

At £19.50 it costs more than nearly nine in ten Puglia IGT Primitivo wines listed on this site. It is hand-picked and generous, but you pay above the usual price for a region-wide Puglia IGT.

Best for an occasion 3.8/10

A region-wide Puglia IGT rather than a top appellation, so it suits a relaxed dinner with friends more than a big celebration.

Best for cellar 2.5/10

A young Puglia IGT for drinking soon, not for keeping. We would drink the 2025 between 2026 and 2028, while the ripe fruit is at its best.

Scoring is rule-based and deterministic. The model and weightings are documented in our Wine Fit Score methodology.

The disciplinare, the place, the label

Who makes Salsedine: the Puglia line of Cantine NAE

Salsedine is a brand, not an estate. Cantine NAE, a young wine company based in Controguerra in Abruzzo, makes it with small local partner producers near Taranto. Its own winemaking team follows the work from vineyard to cellar, and the company bottles all its wines in Controguerra.

01

DOC, DOCG, IGT: what the badges mean

Italian wine law sorts bottles into a pyramid. DOCG sits at the top: tightly drawn boundaries, prescribed grapes, mandatory ageing, government tasting before release. DOC is the same idea with looser thresholds. IGT (Indicazione Geografica Tipica) is broader still, requiring only that 85% of the grapes come from the named territory.

Puglia is in the IGT tier. That is not a quality verdict, it is a description of how much freedom the producer has at vinification and ageing.

02

The denomination rules, in detail

  • Allowed grapes. 57 varieties listed in the disciplinare
  • Yield ceiling. 26.0 tonnes per hectare
  • Tasting panel. No mandatory pre-release tasting
03

Region and area context

Puglia IGT is the region-wide label, so the grapes can come from anywhere in Puglia.

    15% alcohol and UK tax

    Cost up

At 15% alcohol the UK duty is about £3.44 a bottle, and VAT is about £3.25. Of a £19.50 bottle, about £6.70 is tax.

  2. 02

Priced above most Puglia IGT Primitivo

    Cost up

Nearly nine in ten Puglia IGT Primitivo wines listed on this site cost less than £19.50. This bottle carries the region-wide Puglia IGT, not a stricter appellation such as Primitivo di Manduria.

  3. 03

Grapes picked by hand in early September

    Cost up

Cantine NAE's sheet says the Primitivo is picked by hand in the first half of September. Hand picking takes more people and more time than a machine.

  4. 04

Made near Taranto, bottled in Abruzzo

    Cost up

Cantine NAE makes Salsedine with partner producers near Taranto, then bottles all its wines at its cellar in Controguerra, Abruzzo. Moving the wine north before bottling adds a cost a Puglia estate would not have.

  5. 05

A large, healthy 2025 crop around Taranto

    Cost down

Next door in Primitivo di Manduria, harvest reports put the 2025 crop about 10% bigger, with fears that grape prices would fall. A large, healthy crop around Taranto tends to ease what grapes cost.

Perfect Pairings

Dishes that go with this wine

Food Pairing

Salsedine Primitivo with ragù, red meat and aged cheese

The producer suggests pasta and other first courses, red meat, game, aged cheese and spiced Asian food. At 15% and full-bodied, this Primitivo wants food with weight and fat. Warm spice works, but fiery chilli does not, because the alcohol makes the burn worse.

Body matching Strong match

Lasagne and slow meat ragù

A full-bodied Primitivo at 15% has the weight to match a slow-cooked meat sauce, so neither the wine nor the dish takes over. Its ripe berry fruit meets the sweetness of cooked tomato, and the velvety tannins soften against the meat and cheese.

Try with: Lasagna · Ragu alla bolognese · Agnello Ragu Lucano · More pairings →

Tannin softening Strong match

Grilled steak and lamb

The fat and charred crust of grilled red meat soften this Primitivo's tannins, so the wine tastes even smoother. The black pepper on the nose picks up the seasoning on the meat.

Try with: Ribeye steak · Rack of lamb · Sirloin steak · Lamb chops · More pairings →

Body matching Good match

Game and slow-cooked stews

Game is one of the producer's own matches for this Puglia Primitivo. A rich stew needs a red with this much body, and the soft, ripe fruit rounds out a dark gravy.

Try with: Venison Stew · Beef stew · Lamb shank

Salt balance Good match

Aged hard cheese

Salt in an aged cheese softens the tannin and makes the ripe fruit of this Primitivo taste sweeter. A full-bodied red like this holds up to strong, nutty cheeses that would flatten a lighter red.

Try with: Pecorino sardo e pan carasau · Cheese board · Caciocavallo farcito

Aromatic bridge Good match

Sweet-glazed Chinese roast meats

The coffee, spice and pepper in this Primitivo echo the five-spice and dark sauces on Chinese roast meats. Its soft, ripe fruit meets the sweet glaze, and the fat softens the tannins.

Try with: Char siu · Peking duck · Crispy pork belly · More pairings →

Avoid Clash

Fiery chilli heat

At 15% alcohol, this Primitivo makes chilli burn hotter, and the heat strips out its soft berry fruit. With a hot curry, a lighter Italian red such as a young Valpolicella copes better.

Skip with: Chicken madras · Szechuan beef · Jungle Curry · Pad kra pao moo · Pairing guide →

Drinking + cellar

How long to keep Salsedine Primitivo 2025

Salsedine Primitivo 2025 is on sale about a year after harvest, while its fruit is young and ripe. It is a Puglia IGT for drinking soon, not for laying down. We would open it between 2026 and 2028.

Drinking window

Best in the years above; holds without falling over either side.

Decanting

A short splash decant softens the first-pour edge and opens the aromatics.

Serving temperature

Aim for the cooler end on a warm day; warmer end opens up more aromatics.

Cellar potential
Low

A young Puglia IGT for drinking soon, not for keeping. We would drink the 2025 between 2026 and 2028, while the ripe fruit is at its best.

Common Questions

Cantine NAE makes it. Salsedine is the company's Puglia line, made with small local partner producers near Taranto under its own winemaking team. Cantine NAE is based in Controguerra in Abruzzo, where it bottles all its wines.

It is a full-bodied, soft red with wild berries, coffee and black pepper. The tannins are velvety, the alcohol is 15% and the finish lasts.

Rich dishes suit it best: lasagne, meat ragù, grilled steak or lamb, game and aged cheese. Sweet-glazed roast meats such as char siu also work. Avoid fiery chilli, which the 15% alcohol makes hotter.

Vino.com is the only UK shop selling it, so there is no price to compare. The 2025 costs £19.50 a bottle, and a little less each when you buy six or more.

Earlier vintages have. Luca Maroni scored the 2022 and the 2024 at 97 points on his 99-point scale. Those scores belong to those years, not to the 2025 now on sale.

Salsedine is Italian for the salt you breathe in sea air. Cantine NAE chose the name for the land near Taranto, where sea, sun and wind shape the landscape.
