Ripe citrus first, then pink and white flowers, and a warm toasted-nut note that comes from the four years the wine spends on its yeast. The colour is golden straw with a thick, fine froth.
Soft, creamy and broad, which is the whole point of Satèn. The rules cap the pressure in a Satèn bottle at five atmospheres against six for a normal Franciacorta, so the bubble arrives gently. Underneath it the acidity is still crisp, and the finish runs long.
Long and precise, with the toasted-nut note lasting after the citrus has faded.
