Skin contact gives this Vittoria white its colour and its scent. Orange peel and orange blossom lead, backed by honey, dried chamomile and a wisp of almond. It is the savoury, faintly herbal lift that Vivino drinkers return to across more than 4,700 ratings, never tipping into the funk of heavier orange wines. Apricot and ripe orchard fruit sit underneath.
COS Rami Skin-Contact White, Terre Siciliane
Azienda Agricola COS
COS Rami is Sicily's benchmark skin-contact white from cult Vittoria estate COS: a 50/50 Insolia blend, partnered with Grecanico and now Grillo, fermented on the skins in concrete. Expect orange peel, honey and a saline, almond-tinged grip.
Orange peel, honey and stone: tasting COS Rami
Skin contact in concrete gives this Insolia-based Vittoria white its amber tint and gentle grip. The notes below draw on COS's own datasheet and the consensus of more than 4,700 Vivino drinkers.

Medium-bodied and dry, with the gentle phenolic grip the skins leave rather than hard tannin. The Fontane and Bastonaca vineyards sit on limestone-siliceous sands at 230 metres, and that ground reads as a saline, wet-stone cut beneath the apricot and citrus. Spontaneous fermentation on the skins in concrete builds texture without oak, so the wine stays bright and savoury.
The close is dry and lightly grippy, orange peel and almond lingering over a salty, stony edge. Length is solid for the price rather than profound.
Rami is COS's entry into skin-contact white, a 50/50 blend that has moved from Grecanico to Grillo alongside Insolia in recent vintages. Vivino's crowd rates it 3.9 from over 4,700 ratings and calls it balanced and unforced, an easy first step into orange wine. Drink it with food over the next few years.
COS Rami on UK shelves: 2022 and 2024
Two vintages are listed in the UK: the Grecanico-blend 2022 near 14 pounds and the Grillo-blend 2024 closer to 25. Skin-contact whites from a cult Vittoria producer rarely sit at the bottom of the price list.
How COS Rami scores for food, value and ageing
An honest read on a cult-producer orange wine: strong at the table, fair value for the name, and built to drink young to mid-term rather than to cellar for decades.
Skin-contact grip, bright acidity and a saline, savoury profile make this one of the most food-flexible whites in the cellar, bridging fried antipasti, aged cheese and oily seafood that defeat lighter Sicilian wines.
At roughly 14 pounds for the 2022 and the mid-twenties for the 2024, Rami is fair-to-strong value for an entry skin-contact white from a cult Vittoria producer, where the name usually commands more.
A confident conversation piece from a benchmark natural producer, though as a Terre Siciliane IGT rather than a prestige DOCG it suits an interesting dinner more than a formal celebration.
Characterful and food-friendly, but the orange-wine style and a 2024 price near 25 pounds make it a considered choice rather than a default everyday white.
Scoring is rule-based and deterministic. The model and weightings are documented in our Wine Fit Score methodology.

The 2022 is the Grecanico and Insolia version of Rami, picked in a warm, dry Sicilian season that gave ripe orchard fruit balanced by the skins' grip. At around 11.5% alcohol it drinks well now and holds toward 2030.

Skin-contact grip and citrus: dishes that fit COS Rami
The wine's saline, gently tannic texture and orange-peel lift handle fried antipasti, aged pecorino and savoury seafood that lighter Sicilian whites cannot carry.
Fried Sicilian antipasti
Skin-contact phenolics and bright acidity scour the oil and salt of fried street food, and the orange-peel aromatics refresh the palate between bites. There is enough grip here to frame crisp, savoury fritters without the wine thinning out.
Try with: Arancini · Gnocco fritto · Eggplant parmesan · More pairings →
Aged pecorino and savoury cheese
Honeyed almond and orange-peel aromatics bridge the salty depth of aged sheep cheese, while the skins' gentle tannin carries the fat without turning bitter. The wine meets hard cheese with matching texture rather than fighting it.
Try with: Pecorino sardo e pan carasau · Frittata di maccheroni · More pairings →
Savoury seafood with body
Medium body and skin-contact texture give the wine the weight to sit beside oily, savoury seafood, where a lighter Sicilian white would vanish. Saline minerality echoes the brine rather than clashing with it.
Try with: Squid ink risotto · Mussels · Tuna · More pairings →
Salt-and-pepper fried seafood
The saline, textured palate matches salt-and-pepper fried seafood, and citrus acidity cuts the oil while the gentle grip handles the pepper. A skin-contact white does here what a plush, low-acid white cannot.
Try with: Salt and pepper squid · Salt and pepper prawns · Sweet and sour prawns · More pairings →
Tempura and delicate fry
Orange-peel and chamomile aromatics lift delicate battered prawns, and crisp acidity resets the palate after each piece. The wine's light grip adds interest without overwhelming the fry.
Try with: Prawn Tempura · Tempura · Sashimi · More pairings →
Fierce chilli heat
Fierce chilli heat amplifies the wine's phenolic grip and turns the gentle bitterness hard, hollowing out the fruit. Capsaicin and skin-contact tannin pull in opposite directions, so save the bottle for savoury rather than fiery dishes.
Skip with: Vindaloo · extra-hot Sichuan chilli dishes · scotch-bonnet sauces · fiery green curry · Pairing guide →
Peak around 2027. Best in the years above; holds without falling over either side.
Built mainly for relative youth, though skin-contact phenolics let it hold five to eight years; aged in concrete, the 2022 will keep toward 2030 without gaining real complexity.
£14.07 is the lowest tracked offer for the current vintage and we have no signal of further discounting.
