Blackberry, cherry and ripe fruit come first, in Doppio Passo's own words. Spice, toast and vanilla from the nine months in wood show more as the wine ages. Callmewine's tasters in Milan add cherry in spirit, sweet spices, cocoa and a whiff of Mediterranean scrub. Vino.com lists the aromas as ripe cherry and blackberry.

Primitivo di Manduria DOC covers 18 towns between Taranto and Brindisi. A Riserva must age two years from 1 November after the harvest, nine months of them in wood, and reach 14% alcohol. Doppio Passo's Riserva does exactly that: 24 months, nine in wooden casks, at 14.5%.

Italian wine law sorts bottles into a pyramid. DOCG sits at the top: tightly drawn boundaries, prescribed grapes, mandatory ageing, government tasting before release.
