Tasting Notes

Dried rose and forest floor: tasting Ca' del Baio Vallegrande

Ca' del Baio describes its Vallegrande as the elegant face of Barbaresco, grown on west-facing marl at Treiso and aged two years in Slavonian oak. Drinkers and the producer agree on dried flowers, red cherry and underbrush over fine tannins.

Nose

Intense and perfumed: dried rose and faded violet over red cherry and raspberry, with the underbrush and forest-floor character Ca' del Baio highlights from its west-facing Vallegrande marl. Vivino drinkers consistently note floral and earthy aromas, with tobacco emerging as the wine ages.

Palate

Dry, smooth and rounded, as the producer describes, with bright Nebbiolo acidity and fine, balanced tannins rather than muscle. Red cherry and liquorice carry a savoury, earthy core; the 24 months in Slavonian oak add a gentle spice and dried-leaf depth rather than overt new wood.

Finish

Warm and persistent, as Ca' del Baio notes, closing on dried rose, leather and a touch of tar that lengthens with bottle age.

Overall

Ca' del Baio's most traditional Barbaresco and the elegant, earlier-drinking face of the estate, sitting below its Asili and Riserva cuvees. Vivino's community rates it 4.0 across some 400 reviews, and recent vintages have drawn 94 to 95 points from Vinous and James Suckling. Soft from about three years on, it rewards a decade or more in the cellar.

Wine fit score

How Vallegrande scores as an Italian wine

A structured, high-acid Nebbiolo built for the table and the cellar. Ca' del Baio's Vallegrande scores strongly for food and ageing, and lower for casual everyday drinking.

Best with food 9.0/10

High acidity, fine tannin and savoury Nebbiolo depth make this a versatile match for Piedmontese braised meats, truffle and aged cheese.

Best for an occasion 8.5/10

A single-vineyard Barbaresco DOCG with critic pedigree and traditional cru cachet, well suited to special meals and gifting.

Best for cellar 8.4/10

Barbaresco DOCG ageing rules plus 24 months in Slavonian cask and the producer's 10 to 15-year window support medium to long cellaring.

Best value 8.2/10

A single-vineyard Barbaresco from a 94 to 95-point producer in the mid-twenties to mid-thirties in pounds undercuts most cru Barbaresco; Vivino rates it at or above its price peers.

Best intro to this style 6.0/10

An indigenous Nebbiolo classic, but firm tannin, high acidity and savoury tar and forest-floor notes suit developing palates; Vallegrande's elegant style eases the way.

Best everyday bottle 3.0/10

Structured, age-worthy and priced above 20 pounds: a considered red for the table rather than a midweek pour.

Scoring is rule-based and deterministic. The model and weightings are documented in our Wine Fit Score methodology.

Vintages

Barbaresco Vallegrande across vintages

Vallegrande is built to age: soft and elegant about three years after harvest, then developing for 10 to 15 years. The 2023 came from a hot, late Langhe season that gave balanced, perfumed Nebbiolo.

A hot, late Langhe vintage: a wet, disease-prone spring and a summer heatwave above 40C gave way to ripening that ran into late October. Skilled Treiso producers like Ca' del Baio made balanced, perfumed Nebbiolo, fresher than the scorching 2022.

The disciplinare, the place, the label

Why Ca' del Baio's Vallegrande is priced where it is

A single-vineyard Barbaresco DOCG from old Treiso vines planted in 1967, aged two years in Slavonian cask. Here is what shapes its price, from estate fruit to UK duty.

01

DOC, DOCG, IGT: what the badges mean

Italian wine law sorts bottles into a pyramid. DOCG sits at the top: tightly drawn boundaries, prescribed grapes, mandatory ageing, government tasting before release. DOC is the same idea with looser thresholds. IGT (Indicazione Geografica Tipica) is broader still, requiring only that 85% of the grapes come from the named territory.

Barbaresco is in the DOCG tier. That is not a quality verdict, it is a description of how much freedom the producer has at vinification and ageing.

02

The denomination rules, in detail

  • Allowed grapes. 1 varieties listed in the disciplinare
  • Yield ceiling. 8.0 tonnes per hectare
  • Minimum ABV. 12.5% vol
  • Minimum ageing. 26 months total (of which 9 in oak)
  • Tasting panel. Mandatory pre-release tasting commission
03

Region and area context

Barbaresco falls within Piedmont, covering Cuneo, Langhe: Barbaresco, Neive, Treiso and Alba's San Rocco Seno d'Elvio fraction. The denomination is further divided into 4 sub-zones.

Old estate Nebbiolo from Vallegrande, planted 1967, hand-harvested
  1. 01

Old estate Nebbiolo from Vallegrande, planted 1967, hand-harvested

    Cost up

Ca' del Baio's Vallegrande fruit comes from west-facing estate vines planted from 1967 around the Treiso winery; old-vine, hand-picked Nebbiolo lifts cost over bought-in or young-vine fruit.

  2. 02

24 months in Slavonian oak casks plus 6 months in bottle

    Cost up

The wine is held two years in large Slavonian casks then six months in bottle before release, tying up cellar space and capital for nearly three years before any sale.

  3. 03

Single-vineyard cru bottling from a small Treiso estate

    Cost up

Bottling Vallegrande as a named cru, rather than blending it into a regional Barbaresco, means lower volumes and a price premium over entry Barbaresco.

  4. 04

Barbaresco DOCG status and release discipline

    Cost up

DOCG rules mandate a minimum 24 months ageing and a release-tasting commission for Barbaresco, adding time and compliance cost that IGT or Langhe Nebbiolo avoid.

  5. 05

UK duty and VAT on a still wine

    Cost up

At 2026 rates UK alcohol duty is about 2.67 pounds a bottle plus 20% VAT; on the 24.84 pounds entry price that is roughly 6.80 pounds before the retailer's own margin.

  6. 06

Traditional large-cask ageing, not new barrique

    Cost down

Ageing in large Slavonian botti that last decades, rather than buying new French barriques each vintage, keeps oak cost well below many modern-styled cru rivals.

Food Pairing

Nebbiolo acidity and fine tannin: dishes for Vallegrande

Ca' del Baio points to roast and braised meats, mature cheeses and fondue. The wine's bright acidity and fine tannin cut fat and bridge to truffle and forest-floor dishes of the Langhe.

Tannin softening Strong match

Brasato and Piedmontese braised beef

Nebbiolo's fine tannins and bright acidity slice through the gelatinous richness of long-braised beef, while the meat's protein and fat soften the tannin grip into something seamless. A textbook Langhe match.

Try with: Brasato al Barolo · Ossobuco alla Milanese · Sunday Roast Beef · Fillet steak · More pairings →

Aromatic bridge Strong match

White truffle and the Langhe table

The wine's dried-rose, underbrush and forest-floor aromatics bridge directly to white truffle and porcini, echoing the earthy register rather than fighting it. Ca' del Baio's elegant style keeps the pairing refined.

Try with: Tajarin al Tartufo · Truffle risotto · Porcini mushroom risotto · Agnolotti del Plin · More pairings →

Fat cutting Good match

Aged mountain cheese and fonduta

Acidity and fine tannin cut the fat of melted Alpine cheese and fonduta, while the wine's savoury depth stands up to a mature, salty rind. The producer names cheeses and fondue among its own pairings.

Try with: Fonduta · Cheese board · aged Castelmagno · Parmigiano Reggiano

Body matching Good match

Game birds and autumn roasts

Vallegrande's medium-full body and perfumed savouriness match game and slow roasts without flattening them, a lighter-framed alternative to Barolo for the same dishes.

Try with: Roast Pheasant · Venison Stew · Duck breast · Roast Duck · More pairings →

Acidity matching Good match

Meat ragu and stuffed Langhe pasta

The bright acidity that defines Nebbiolo locks onto slow-cooked meat ragu and butter-dressed stuffed pasta, refreshing each bite. A regional pairing that plays to the grape's structure.

Try with: Agnolotti del Plin · Tagliatelle al tartufo di Acqualagna · Agnello Ragu Lucano · More pairings →

Avoid Clash

Delicate seafood and fiery chilli heat

Firm tannin and high alcohol overwhelm delicate white fish and make oily seafood taste metallic, while chilli heat is amplified by the tannin and warmth. Save this Barbaresco for richer, savoury plates.

Skip with: Sushi · grilled sole · crispy chilli beef · Szechuan beef · prawn curry · Pairing guide →

Drinking + cellar

Cellaring Ca' del Baio Barbaresco Vallegrande

The producer recommends laying bottles down in the dark at a constant temperature. Vallegrande keeps developing for 10 to 15 years from the vintage, making the 2023 a candidate through the 2030s.

Drinking window
2026 → 2038

Decanting
