The Dancing Satyr, a Greek bronze hauled from these waters, has its own museum beside the kasbah. Couscous is the lunch order, and the Grillo and Inzolia poured with it grow in the flats behind town.

The salt museum at Nubia and an evening cable car up to Erice fill the half day before the boat; Erice DOC whites pour in the mountain town's bars. Ferry check-in is on the seafront, outside the restricted centre.

Cantina Siciliana. In the old Jewish quarter, a trattoria run since 1958; the couscous comes seasoned with the red garlic grown at Nubia by the salt pans.

Donnafugata's Khamma cellar and the dammusi-dotted terraces are the wine day; the Specchio di Venere crater lake and the hot spring at Gadir close it. The vite ad alberello here has been UNESCO-listed since 2014.
