- Typical of Carménère
An intense bouquet of ripe strawberries, roses and violets, with floral notes from the Corvina, which makes up half the blend. The Syrah adds fine fruit and spice. Red fruit leads, strawberry and raspberry above all.
Light, fresh and dry, elegant and subtly spicy, with significant acidity from the Corvina and structure from the Carménère. Decanter found the 2021 "light, fresh and quaffable", with "an appealing strawberry and herbal character".
The Trebbiano di Lugana brings elegance and a long finish. On the 2021 it turned to bitter pink grapefruit, the kind of finish that begs for a top-up.
A pale, dry rosé that Pasqua, the Verona family winery founded in 1925, created "to accompany spring or summer evenings". A well-liked everyday rosé that people come back to.

Light, fresh and dry, it suits fish, sushi, fresh cheese and salads. Big stews and hot curries swamp it.
The bottle is a talking point. It has a glass stopper, the Latin line Odi et amo under the name, and a front label with a round cut-out. It suits a summer lunch or a gift for a rosé lover.
Light and 12.5%, it is easy to open on a weeknight. The price, £16.50 to £19.50 at four of the five shops, holds it back.

What to eat with 11 Minutes Rosé
Fish, sushi, fresh cheeses and summer aperitifs suit it, as does baked white fish with olives and tomatoes. A light, dry rosé like this suits delicate food better than big stews.
Sushi and other raw fish
Salty soy sauce makes the wine's red fruit taste rounder, and its freshness keeps raw fish tasting clean. Sushi is a natural match for 11 Minutes, a pale, light Veneto rosé.
Try with: Nigiri Sushi · Sashimi · Prawn Tempura · More pairings →
Fresh cheese, tomato and olives
The wine's freshness keeps soft, milky cheese and ripe tomato tasting bright, not heavy. Pasqua chose Corvina, half the blend, partly for its acidity. Fresh cheeses, olives and tomatoes all suit 11 Minutes.
Try with: Insalata Caprese · Burrata with tomatoes · Green olives
Delicate white fish
A light wine will not bury a delicate fish. Decanter called this rosé "light, fresh and quaffable", and white fish, baked or plain, is among the best matches for 11 Minutes.
Try with: Steamed sea bass · Baked cod · Grilled sole
Crab, prawns and other shellfish
Sweet shellfish meets the wine's soft red fruit, and neither drowns the other. Strawberry, peach and raspberry run through 11 Minutes, and shellfish is the first food to reach for.
Try with: Crab · Salt and pepper prawns · Mussels
Smoked salmon and summer nibbles
Salty, oily bites coat the mouth, and a fresh, dry rosé rinses it clean. Decanter found a bitter pink grapefruit finish on the 2021, which helps here. Summer aperitifs are where 11 Minutes belongs.
Try with: Scottish Smoked Salmon · Prosciutto crudo · Salted almonds
Hot chilli and heavy stews
Strong chilli heat and big, rich sauces drown a wine this light, and its strawberry and rose notes vanish. For a beef stew, pour a full, dry Italian red such as an Amarone della Valpolicella instead.

How long to keep Pasqua 11 Minutes Rosé
Drink it young. The 2025 is ready now and best by the end of 2028, and Decanter gave the 2021 a window of 2022 to 2024.
Best in the years above; holds without falling over either side.
Aim for the cooler end on a warm day; warmer end opens up more aromatics.

Common Questions
It is named after the 11 minutes the juice spends with the grape skins while Pasqua presses the destemmed grapes. That short contact gives the wine its slight pink colour and keeps its character very delicate.
Yes, it is the same wine. Odi et amo, Latin for "I hate and I love", is a line by the Roman poet Catullus printed under the name on the label. Some sites add it to the name: Decanter, for one, lists the wine as 11 Minutes Odi et Amo Rosé.
It is a blend of Corvina, Trebbiano di Lugana, Syrah and Carménère. Pasqua's sheet for the 2024 gives 50% Corvina, 25% Trebbiano, 15% Syrah and 10% Carménère, and the 2025 keeps the same split. Corvina and Trebbiano di Lugana are native grapes; Syrah and Carménère are international ones.
It is a light, dry rosé with strawberry, peach and floral notes. Decanter found the 2021 "light, fresh and quaffable", with a bitter pink grapefruit finish. Red fruit leads, then peach and other tree fruit, then citrus. The 2024 has 5.5 grams of sugar per litre.
Y by 11 Minutes is a different Pasqua rosé that uses French oak. It has three grapes, Corvina, Trebbiano di Lugana and Carménère, with no Syrah. Part of it finishes fermenting in new French oak, and another part spends four months in French oak barrels. It is 13% alcohol, while 11 Minutes is 12.5% and made in steel tanks.
Majestic sells the 2025 at £18.00 a bottle, xtrawine at £16.50 and Svinando at £19.50. Vino.com also stocks it, with a discount on six bottles or more.
