DOC, DOCG, IGT: what the badges mean

Italian wine law sorts bottles into a pyramid. DOCG sits at the top: tightly drawn boundaries, prescribed grapes, mandatory ageing, government tasting before release. DOC is the same idea with looser thresholds. IGT (Indicazione Geografica Tipica) is broader still, requiring only that 85% of the grapes come from the named territory.

Puglia is in the IGT tier. That is not a quality verdict, it is a description of how much freedom the producer has at vinification and ageing.

Food Pairing
Body matching Strong match

Roasts and red meat

Torrevento suggests red meat and roasts. A full-bodied red with a year in oak has the weight to match them.

Try with: Roast lamb or a grilled steak

Tannin softening Good match

Game

Game is on the producer's own list. Rich, meaty dishes soften the wine's tannins and bring out its dark fruit.

Try with: Venison or wild boar stew

Salt balance Good match

Aged cheese and cured meats

The producer also pairs it with aged cheeses and cured meats. Their salt sets off the ripe, jammy fruit.

Try with: Aged pecorino and salami

Aim for the cooler end on a warm day; warmer end opens up more aromatics.
