Tasting Notes

How Cantine Maschio's Extra Dry Prosecco DOC tastes

Cantine Maschio keeps only the juice from the first gentle pressing and settles it cold for 12 hours before it ferments. The result is a light, soft Prosecco DOC that smells of white peach and orange blossom.

Drinker consensus · confidence Medium
Nose

White peach and orange blossom come first, then pear and a squeeze of lemon. Cantine Maschio uses only the juice from the first gentle pressing, which the winery likens to making extra virgin olive oil.

Palate

Light and soft, with a lively fizz and a gentle touch of sweetness. Extra Dry keeps 12 to 17 grams of sugar per litre, more than a Brut, and here it rounds out flavours of peach and almond. At 10.5% alcohol it feels easy rather than heady.

Finish

The finish is clean, with lemon and a hint of almond, and turns a little firm at the very end. Maschio settles the juice cold for 12 hours before it ferments, a step the winery takes to protect the grape's aroma.

Overall

An easy, good-value party Prosecco rather than a complex one. Drinkers pick out pear and peach most, with lemon behind, and Falstaff scored an earlier bottling 87 points in 2019. Open it by the end of 2027.

Where Cantine Maschio's Extra Dry Prosecco scores best

Best intro to this style and Best value lead the scores. This is a soft Prosecco DOC from Cantine Maschio, with gentle sweetness and 10.5% alcohol, at £10.50 a bottle.

Best intro to this style 8.8/10

Soft, fruity and lightly sweet, with only 10.5% alcohol. It shows plain Prosecco DOC as most people know it: white peach, pear and gentle bubbles.

Best value 8.6/10

At £10.50 a bottle, and less in a mixed six at Majestic, it costs less than most Prosecco DOC sold in UK shops.

Best everyday bottle 8.4/10

Low price, low alcohol and an easy, fruity style make it a bottle to open on an ordinary evening rather than save for later.

Best with food 7.6/10

Fresh acidity, bubbles and a slight sweetness make it an easy partner for fried snacks, salty starters and smoked fish. It is too light for rich meat or strong chilli.

Best for an occasion 4.0/10

Good fizz for a party or a toast at a fair price. A plain Prosecco DOC will not impress like a Conegliano Valdobbiadene DOCG or a Franciacorta.

Best for cellar 1.0/10

A non-vintage Prosecco made in tanks and bottled ready to drink. Prosecco is best drunk young, so there is nothing to gain from keeping it.

Scoring is rule-based and deterministic. The model and weightings are documented in our Wine Fit Score methodology.

No vintage on the label: a Prosecco DOC to drink young

This Extra Dry carries no year. Cantine Maschio stores its grape juice so it can make sparkling wine all year round, which keeps the fruit fresh. Prosecco is best drunk young, so we would finish a bottle bought now by the end of 2027.

The disciplinare, the place, the label

Cantine Maschio: a family distillery that became a winery in 1973

In 1973 Bonaventura Maschio turned his family's century-old distillery into a winery. Cantine Maschio is based at Visnà di Vazzola, in the province of Treviso, and is now part of Cantine Riunite & CIV, a co-operative group. Falstaff scored an earlier bottling of this Extra Dry 87 points in November 2019.

01

DOC, DOCG, IGT: what the badges mean

Italian wine law sorts bottles into a pyramid. DOCG sits at the top: tightly drawn boundaries, prescribed grapes, mandatory ageing, government tasting before release. DOC is the same idea with looser thresholds. IGT (Indicazione Geografica Tipica) is broader still, requiring only that 85% of the grapes come from the named territory.

Prosecco is in the DOC tier. That is not a quality verdict, it is a description of how much freedom the producer has at vinification and ageing.

02

UK duty and VAT on a 10.5% sparkling wine

    Cost up

Of the £10.50 bottle, about £4.16 is tax. Duty is £2.41 at £30.62 per litre of pure alcohol, a rate sparkling wine has shared with still wine since August 2023, and VAT is £1.75.

  2. 02

Only the juice from the first gentle pressing

    Cost up

Cantine Maschio keeps only the free-run juice from the first gentle pressing for its sparkling wines, so part of each grape's juice never reaches this bottle.

  3. 03

Bubbles made in large sealed tanks in about four weeks

    Cost down

Maschio's second fermentation takes about four weeks in pressure tanks, then the wine is chilled and bottled. That is far quicker than making the bubbles bottle by bottle.

    Cost down

Cantine Maschio, by its own account a main player in its sector, is part of Cantine Riunite & CIV, a co-operative group. It sells in many countries, and large runs spread fixed costs over many bottles.

    Cost down

Plain Prosecco DOC can come from nine provinces across Veneto and Friuli Venezia Giulia. That is a far larger area than the Conegliano Valdobbiadene DOCG hills, whose wines usually sell for more.

Perfect Pairings

Dishes that go with this wine

Food Pairing

Fried snacks and salty starters for Maschio's Extra Dry Prosecco

Extra Dry Prosecco keeps 12 to 17 grams of sugar per litre, and that slight sweetness sets off salty canapés and starters. The bubbles and fresh acidity scrub away oil, so arancini, gnocco fritto and fish and chips all work with Cantine Maschio's Prosecco DOC.

Fat cutting Strong match

Fried Italian snacks: arancini and gnocco fritto

The bubbles and fresh acidity scrub oil from the mouth after each bite, and the light body never weighs the food down. A soft Extra Dry Prosecco DOC like Maschio's keeps fried rice balls and puffed fried dough tasting light.

Try with: Arancini · Gnocco fritto · Pizza Fritta · Panzerotti · More pairings →

Salt balance Strong match

Venetian salt cod and small shrimps on polenta

The slight sweetness of an Extra Dry softens salt, and the bubbles lift creamy textures. Maschio's Prosecco DOC, from a winery in the Veneto, sits well beside baccalà mantecato, the whipped salt cod of Venice.

Try with: Baccala Mantecato · Polenta e schie · Vitello Tonnato · More pairings →

Acidity matching Good match

Smoked salmon and British shellfish starters

Fresh acidity and bubbles cut through oily smoked fish and buttery potted shrimp. With oysters, the touch of sugar in this Extra Dry Prosecco DOC from Maschio softens the salty brine.

Try with: Scottish Smoked Salmon · Potted Shrimp · Oysters · More pairings →

Sweet balance Good match

Sweet chilli dips, tempura and spring rolls

A sweet dipping sauce makes a very dry wine taste sour. Extra Dry Prosecco like Maschio's holds 12 to 17 grams of sugar per litre, enough to keep pace with a sweet chilli dip. The bubbles clean up the batter.

Try with: Spring rolls · Prawn Tempura · Salt and pepper prawns

Body matching Good match

Light Veneto rice and fresh summer plates

A light sparkling wine at 10.5% suits light dishes that a heavier white would bury. Maschio's Prosecco DOC matches risi e bisi, the Veneto rice and pea dish, and its peach fruit sits well with fresh mozzarella and tomato.

Try with: Risi e bisi · Insalata Caprese · Torta pasqualina · More pairings →

Avoid Clash

Fierce chilli heat

Strong chilli heat swamps the delicate peach and pear fruit, so the wine tastes thin and sharp. Keep Maschio's light Prosecco DOC for milder food and save the hot curry for another bottle.

Skip with: Chicken jalfrezi · Crispy chilli beef · Jungle Curry · Pizza Diavola · Pairing guide →

Keeping Maschio Prosecco Extra Dry: buy it to open soon

Cantine Maschio makes the bubbles in large sealed tanks over about four weeks, then bottles the wine ready to drink. It gains nothing from cellaring, so open it by the end of 2027 while the peach fruit is fresh.

Common Questions

It tastes dry with a soft touch of sweetness, a little sweeter than a Brut. Extra Dry Prosecco holds 12 to 17 grams of sugar per litre, while Brut stays under 12. In this bottle the sugar rounds out the white peach and pear and takes the edge off the acidity.

Cantine Maschio makes it at its winery in Visnà di Vazzola, in the province of Treviso. Bonaventura Maschio turned his family's century-old distillery into a winery in 1973. The winery is now part of Cantine Riunite & CIV, a co-operative wine group.

No, it is a different bottling. Maschio's Treviso Prosecco prints 'Treviso' on the label, and its grapes come from the Treviso area. The bottle pictured here says plain Prosecco DOC, an area that covers nine provinces across Veneto and Friuli Venezia Giulia.

Majestic sells it, at £10.50 for a single bottle and less per bottle when you mix six. It is the only shop on this page, so there is no price to compare here.

Salty and fried starters suit it best: arancini, gnocco fritto, fish and chips or smoked salmon. The bubbles and fresh acidity clean up oil, and the slight sweetness softens salt. Avoid fiery chilli dishes, which make the wine taste thin.

Not long: we would open a bottle bought now by the end of 2027. It carries no vintage year, and Prosecco is best drunk young, while the fruit and bubbles are fresh.
