Tasting Notes

What Cantina Produttori Cormòns Collio Pinot Grigio tastes like

Picked early, in the first ripening window, the grapes are de-stemmed and get a long cold soak in refrigerated presses. Only then does the juice ferment, at a controlled temperature. The Pinot Grigio berries themselves are small, grey-red and copper-skinned, so a glass of this wine is never water-pale.

Nose

Golden yellow with copper tints and grey shades in the glass. The nose is fruity, almost like a sweet: banana and ripe acacia honey, in the producer's own words. On the 2024 Falstaff found "Williams pear and white pepper on the nose with a hint of chamomile".

Palate

Soft and velvety, full in the mouth, dry and gentle, with a hazelnut note that drinkers pick out as almond. Apple and pear sit underneath. The de-stemmed grapes get a long cold soak in refrigerated presses. The wine then spends six to seven months on its fine yeast in large oval oak barrels.

Finish

Dry and gentle to the end, with the hazelnut last to leave. A stony edge comes from the Collio hills, where sun and sea breeze give these wines their fragrance.

Overall

A soft, full-flavoured Pinot Grigio for the table rather than the aperitif. It sits in the Collio line of Cantina Produttori Cormòns, a cooperative founded in 1968. Its 90 or more grower families farm 320 hectares of vines. Drink the 2024 from 2025 to 2027 and the 2025 from 2026 to 2028.

Wine fit score

Where Cormòns Collio Pinot Grigio fits best

Best intro to this style and Best with food are its strongest cards. It is made soft and dry here, with the producer's own list of cured meats, fish and risotto to lean on.

Best intro to this style 8.5/10

A Pinot Grigio made soft, dry and gentle, with banana and acacia honey rather than sharp edges: an easy first Collio white.

Best with food 8.0/10

A soft, dry white with a hazelnut note and well-integrated acidity. The producer's own list runs from cured meats and fish starters to risotto alla Milanese and white meats.

Best value 6.8/10

At £19.30 for the 2025 and £19.40 for the 2024 it sits in the cheaper half of the Collio Pinot Grigio prices on this site, with most others dearer. A Falstaff 90 stands behind the 2024.

Best everyday bottle 6.2/10

At £19.30 and £19.40 it is easy to drink and easy to afford. Still a cooperative's Collio DOC bottling, not a weeknight supermarket Pinot Grigio.

Best for an occasion 4.5/10

A Collio DOC white at about £19 with a Falstaff 90 for the 2024: right for a dinner with cured meats or risotto, not a celebration bottle.

Best for cellar 3.0/10

Six to seven months in large oak and a two to three year window: drink the 2024 by 2027 and the 2025 by 2028. Not a wine to lay down.

Scoring is rule-based and deterministic. The model and weightings are documented in our Wine Fit Score methodology.

The disciplinare, the place, the label

Collio DOC, the hill zone behind Cormòns Pinot Grigio

Collio is a DOC of hillside vineyards in the province of Gorizia, on the far north-eastern edge of Italy. Its rules cap the harvest at 11 tonnes per hectare. The producer's sheet describes the ground as the Flysch of Cormòns: layers of sandstone and marl, rich in limestone.

01

DOC, DOCG, IGT: what the badges mean

Italian wine law sorts bottles into a pyramid. DOCG sits at the top: tightly drawn boundaries, prescribed grapes, mandatory ageing, government tasting before release. DOC is the same idea with looser thresholds. IGT (Indicazione Geografica Tipica) is broader still, requiring only that 85% of the grapes come from the named territory.

Collio Goriziano/Collio is in the DOC tier. That is not a quality verdict, it is a description of how much freedom the producer has at vinification and ageing.

  1. 01

Collio DOC caps the harvest at 11 tonnes per hectare of hillside vines

    Cost up

The Collio rules allow at most 11 tonnes of grapes per hectare. Fewer grapes from the same hill means each bottle carries more of the land's cost than one from a zone with a looser cap.

  2. 02

Six to seven months on its fine yeast in large oval oak barrels

    Cost up

The wine rests six to seven months on its fine yeast in big oval oak barrels. The cooperative's money sits in the cellar for most of a year before a bottle is sold.

  3. 03

A cooperative of more than 90 grower families since 1968

    Cost down

Cantina Produttori Cormòns was founded in 1968. Today more than 90 grower families farm its 320 hectares, so one cellar serves many wines and the cost of each bottle is shared widely.

  4. 04

A field book for every member and eight weather stations

    Cost up

Each grower records pruning dates, treatments and doses in a shared field book. Eight weather stations feed the winery's computer so problems are caught early. That care costs money before a grape is picked.

  5. 05

UK duty and VAT inside the £19.40 and £19.30 the shop asks

    Cost up

Of the £19.40 the one shop on this page asks for the 2024, about £6.33 is tax. That is £3.10 duty on a 13.5% bottle (£30.62 per litre of pure alcohol since 1 February 2026) plus £3.23 VAT. The 2025 at £19.30 carries about £6.32.

Perfect Pairings

Dishes that go with this wine

Food Pairing

Dishes that suit a soft, hazelnut-edged Collio Pinot Grigio

The producer's own list runs from fish starters and prosciutto crudo to risotto alla Milanese, gnocchi with butter, fried fish and white meats. The thread is softness. This is a round, dry white, not a sharp one, so it sits best beside butter, salt and gentle flavours rather than chilli.

Salt balance Strong match

Prosciutto crudo, culatello and cold cuts

Salt in cured ham makes this soft Collio Pinot Grigio taste rounder and its acacia honey note sweeter. The wine's dry, gentle finish then wipes the fat from the tongue. Cured meats sit at the top of the producer's own list for it, right after fish starters.

Try with: Prosciutto crudo · Culatello · Gnocco fritto · Frico

Body matching Strong match

Risotto alla Milanese and gnocchi with butter

Butter and saffron need a white with some flesh, and this Pinot Grigio has it: velvety, full in the mouth, with a hazelnut note that echoes browned butter. A sharp, thin white would taste sour beside the same plate.

Try with: Risotto alla Milanese · Pumpkin risotto · Risi e bisi · Gnocchi with butter and sage · More pairings →

Acidity matching Good match

Fish starters: creamed salt cod, shrimps on polenta, mussels

A cold fish starter wants a white that stays dry and clean rather than loud. This Collio Pinot Grigio does that. Its acidity is well integrated, so it refreshes creamed salt cod or a plate of mussels without fighting them.

Try with: Baccala Mantecato · Polenta e schie · Impepata di cozze · Cozze arraganate · More pairings →

Fat cutting Good match

Fried and grilled fish

Batter and frying oil coat the mouth. A dry white with gentle acidity rinses it, and the soft, honeyed fruit of this Pinot Grigio keeps the fish tasting sweet. Grilled fish works the same way, with less to cut.

Try with: Fish and Chips · Prawn Tempura · Fritto misto · Grilled sea bass

Aromatic bridge Good match

White meats, roast or boiled

The hazelnut note in this Collio Pinot Grigio bridges to browned chicken skin and breaded veal. Its softness suits plain boiled meats that a tannic red would overpower. The producer lists white and boiled meats for it.

Try with: Roast chicken · Vitello Tonnato · Cotoletta alla Milanese · Bollito dei Pastori · More pairings →

Avoid Clash

Hot curries and chilli heat

Chilli heat makes a soft, honeyed 13.5% white taste hotter and flabbier than it is, and buries the banana and hazelnut. Keep this Pinot Grigio for gentle flavours and pour an off-dry white with the curry.

Skip with: Chicken madras · Crispy chilli beef · Jungle Curry · Pizza Diavola · Pairing guide →

Drinking + cellar

Keeping Cormòns Collio Pinot Grigio: a wine for the next three years

Keep the bottle cool, dark and at a steady temperature, as the producer advises. Open it within three years of the harvest: 2025 to 2027 for the 2024, 2026 to 2028 for the 2025.
