Plum jam, black cherry and cinnamon: Àpulo in the glass
The estate's own recipe is simple: ripe Salento Primitivo, a week on the skins, steel tanks and no oak. What reaches the glass is jammy fruit with a warm spice edge, the exact trio on its Italian seller's sheet.

Plum jam and black cherry lead, with a dust of cinnamon and, on vino.com's list, a touch of vanilla. The style is jammy rather than fresh-picked: ripe Salento fruit first.
Soft and enveloping, exactly the shape its seller describes: juicy ripe fruit, gentle tannin and enough fresh acidity to keep it moving. It never sees oak, three months in steel tanks and out, so the fruit stays loud.
Decent length for an £11 bottle, the plum-jam sweetness fading last. Svinando's tasters call the persistence long and the balance the point.
An easy, sunny Primitivo to drink young, sitting below the estate's cru wines like Sasseo. Vivino drinkers score it 3.7 overall, with the 2021 and 2022 its best years at 3.8; at £11 it is a solid first taste of Salento.
Where to buy Àpulo Primitivo in the UK
One UK route today: Svinando UK lists the 2020 at £11 with free delivery. The 2022 sold out at 15.90 euros on vino.com in Italy.
How Àpulo scores as an everyday red
High marks for weeknights and beginners, low for the cellar: an £11 steel-aged Primitivo does its job at the dinner table, not in storage.
£11, free UK delivery, and a shape that suits weeknight food: this is exactly what it is for.
Jammy, soft and oak-free: its own seller jokes it is easy to drink, even too much so. An ideal first Primitivo.
£11 buys estate-grown, pure Primitivo from the Manduria zone; the steel-only cellar keeps the price honest.
Soft tannin and fresh-enough acidity make it a safe match across pasta, pizza, poultry and grills.
An honest table red, not a statement bottle; the estate's cru wines carry that job.
A drink-young steel red; its retailer says three years at most, and the 2020's window has already closed.
Scoring is rule-based and deterministic. The model and weightings are documented in our Wine Fit Score methodology.

Perfect Pairings
Dishes that go with this wine
Ragù, pizza and roast chicken: where Àpulo fits
Soft tannin and jammy fruit make this a table red, not a sipping red. Its seller points at stuffed pasta and savoury first courses; Vivino adds beef, lamb and poultry.
Baked pasta and meat ragù
Jammy fruit and a soft middle sit level with baked pasta's weight. The gentle tannin will not fight tomato or cheese. Stuffed pasta is its own seller's first suggestion.
Try with: Lasagna · Ragu alla bolognese · Apulian Orecchiette with Broccoli Rabe · More pairings →
Pizza and tomato bakes
Tomato needs a wine with matching freshness or it turns the wine flat. Àpulo keeps what its sheet calls a pleasant basic acidity under the jam, so slice and glass level out.
Try with: Pizza Margherita · Pizza Diavola · Pizza Romana · More pairings →
Roast chicken, lamb and simple grills
With tannin this gentle there is nothing to dry the meat out, and the ripe fruit plays the role of a fruity sauce. Vivino lists poultry, lamb and beef among its matches.
Try with: Roast chicken · Lamb chops · Sunday Roast Beef · More pairings →
Gently spiced grills and kebabs
The cinnamon edge in the wine nods to warm-spiced food. Keep it to gentle spice rubs and grilled meats rather than real chilli heat.
Try with: Chicken Shawarma · Lamb seekh kebab · Tandoori lamb chops · More pairings →
Skip it with hot curries
Real chilli heat pushes the 13.5% warmth and jammy sweetness into harshness. With a madras or Szechuan dish, a crisp southern white like the estate's own Fiano grape, or a chilled dry Lambrusco, copes far better.

Drink Àpulo young: no cellar, no fuss
This is a steel-aged red built for the year it is opened. Its retailer's advice is three years at most, and by our own 2020 to 2023 window this vintage's storing days are over: open bottles now rather than keep them.
Best in the years above; holds without falling over either side.
A short splash decant softens the first-pour edge and opens the aromatics.
Aim for the cooler end on a warm day; warmer end opens up more aromatics.
A drink-young steel red; its retailer says three years at most, and the 2020's window has already closed.
£12.50 for a 75cl bottle of the 2020, at Svinando, is the best price we track, and we have no signal of further discounting.

Common Questions
Àpulo is the entry Primitivo of Masseria Altemura, the Zonin family's estate at Torre Santa Susanna in Salento. It is 100% Primitivo, sold as Salento IGT, and made without oak.
Plum jam and black cherry with a dust of cinnamon and a touch of vanilla. The palate is soft and juicy with gentle tannin and fresh enough acidity to stay easy-drinking. Its seller's verdict: easy to drink, even too much so.
No. It ferments in steel, macerates on the skins for about a week, then rests about three months in steel before bottling. The fruit does all the talking by design.
Baked pasta, meat ragù, pizza and roast chicken. Vivino lists beef, lamb, poultry and pasta as its matches; its Italian seller points at stuffed pasta and savoury first courses.
Serve at 16 to 18C, just cooler than the room. It is made to drink young: its retailer says drink it within three years, so open bottles rather than store them.
